Summer is finally here to stay and we are getting ready for all the summer picnics/bbq and outdoor parties, which means lots of quick meals and salads.
So here I’m with an easy-peasy 5 Minutes Protein Packed Summer Salad recipe that’s so easy to put together and tastes absolutely delicious.
Now, if you work from home like me, salads make a perfect and healthy meal but then I really don’t want to be eating the salad day after day.
I want variety and this 5 Minutes Protein Packed Summer Salad is one of my favorite.
It has everything from greens, antioxidants, crunch, meat and a healthy base like couscous and quinoa.
Apart from all that, I’m making this ‘Honey-Orange Vinaigrette’ to add that extra touch of summer or healthy glow as I call it.
Trust me, once you try this ‘Honey-Orange Vinaigrette’, you’d want to drizzle it over Everything!!!
It is tangy-sweet and just perfect on salads to fruits or even a piece of toasted bread.
Apart from all these delicious ingredients, I’m also adding some extra crunch with roasted cashews and chili-lime peanuts.
So go ahead and try this 5 Minutes Protein Packed Summer Salad with homemade Honey-Orange vinaigrette and make it a part of your lunch or picnic menu.
You can meal prep this salad in advance, just chop and pack the ingredients in separate ziploc/small boxes and mix everything when ready to serve.
For Picnics, you can carry the salad in the icebox and serve immediately upon reaching.

- 1 Cup Cooked Quinoa
- 1/2 Cup Cooked Couscous
- 1 Medium Chicken Sausage - cooked and sliced or use any choice of meat or protein
- 1/2 Cup Mung Bean Sprouts
- 1/2 Cup Cooked Chickpeas
- 1/2 Cup Pomegranate Seeds - fresh or frozen
- 1 Small Orange - peeled
- 1 Cup Chopped Kale
- 1/2 Cup Chopped Spinach
- 2 Tbsp Dried Cranberries
- 2 Tbsp Chili Lime Peanuts - or any flavor you like
- 2 Tbsp Roasted Cashews
- 3 Tbsp Fresh Orange Juice
- 1 Tsp Olive Oil
- 1 Tsp Honey
- In a small jar, add the Vinaigrette ingredients and shake to mix everything evenly.
- In a large bowl or serving plate, arrange the salad ingredient.
- Pour the Vinaigrette and serve chilled or you can mix the salad and serve.
