Chocolate Ragi Ladoo (Chocolate Nachni Laddu) Ingredients

Let’s get started with our Diwali dessert and here are the easy ingredients that can be found in any Indian or International store near you or online too:

  • 1 cup ragi flour – check notes – I’m using sprouted ragi flour, use any available
  • 9-11 soft dates (khajur) – pitted
  • 4 tbsp cocoa powder
  • 2 tbsp ghee or coconut oil (for a vegan option)
  • 3-4 green cardamom pods (elaichi)
  • 6-8 rose petals – you can use fresh or dry

Mixed Dry Fruits:

  • 8-9 whole almonds – chopped
  • 8-9 cashews – chopped
  • 8-9 pistachios – pitted & chopped
  • 8-9 walnuts – chopped
  • 3 tbsp pumpkin seeds – chopped
  • 2 tbsp poppy seeds

Decoration:

  • 10-12 rose petals – you can use fresh or dry
  • 4 tbsp chopped mixed dry fruits
  • 2 tbsp poppy seeds
  • 1 leaf silver vark / decorative silver leaf (optional)

How to Make Sugarfree Chocolate Ragi Ladoo 

Although the recipe is fairly easy and quick to make, I’m further dividing it into sub-categories for even easier preparation:

Step 1: Prepare the Dates

  • I’m using soft Kimia dates that I pitted (medjool). If you are using hard/dry dates, soak them in warm water for 5-10 minutes to soften.
  • Once softened, blend the dates + fresh rose petals (if using) into a smooth paste in a food processor or blender jar/magic bullet. Set aside.

Step 2: Roast the Ragi Flour

  • Heat a pan on low flame, add the ghee + ragi flour, and roast for about 2-3 minutes. Stir continuously to prevent burning.
  • When you start noticing a nutty aroma, it means the flour is ready. Remove from heat and let it cool slightly.

Step 3: Roast the Mixed Dry Fruits

  • In the same pan, add the ghee + all chopped dry mixed fruits, and roast for about 2-3 minutes. Stir continuously to prevent burning.
  • Remove from heat and let it cool slightly.
  • Then add the dry fruits and green cardamom pods (elaichi) in a food processor or blender jar and pulse to form a coarse mix. Keep aside

Step 4: Combine Ingredients

  • In a large mixing bowl/large plate, add the roasted ragi flour, date paste, cocoa powder, remaining ghee, and mixed course dry fruits.
  • Mix the ingredients thoroughly. If the mixture seems dry, add a tablespoon of warm water or more melted ghee to achieve a slightly sticky consistency.

Step 5: Shape & Decorate the Ladoos

  • Grease your hands with a bit of ghee or light oil, take a small portion of the mixture (1.5 tbsp), and shape it into a ball.
  • Repeat this process with the remaining mixture to make around 10-12 ladoos.
  • Optionally, roll each ladoo in chopped roses+nuts mixture for added texture and flavors.

Once the Sugarfree Chocolate Ragi Ladoos are ready, you can serve them immediately or store in an air-tight container or box in the refrigerator for uto 3 weeks.
