Creamy, sugar-free, quick and delicious ‘Shahi Dates Makhana Kheer’ decorated with silver foil, fresh rose petals, roasted almonds, raisins, and cardamom is a perfect Diwali, festive, vrat, dessert. It’s gluten-free, can be made vegan and enjoyed by all age groups.
Oh my goodness, today’s recipe is literally one of my all-time favorites but with a healthy twist, making it sugar-free!
Diwali or for that matter, any festival is incomplete without mithai/sweets which also means we end up stuffing ourselves with tons of sweets and comfortfood.
So, I wanted to share one of our family’s favorite recipes, made with natural sweets, and it literally tops our list -> ‘Dates Makhana Kheer’ ❤️
It’s simply divine, takes less than 15 minutes to make, and has a thick rabri like texture (you can add more milk to thin it).
” Combining the nutritional richness of makhana (fox nuts) and the natural sweetness of dates, this dessert offers a delicious way to indulge without compromising on health “
Makhana / Phool Makhana / Foxnuts: is an Indian SUPERFOOD, that has so many health benefits besides being low carb, low fat, nutrient rich and more.
Dates: as we all know, is rich in fiber, provides natural sweetness, filled with antioxidants and has many many nutrients benefits.
Since we are making it for ‘Diwali – Indian Festival of Lights’, we are going all out and giving it a ‘Royal or Shahi’ look, feel and taste by decorating it with silver foil and lots of dry fruits and saffron.
For Making Kheer:
For Decoration: these are all optional
Just gather these simple ingredients and you can customize the dry fruits as per taste or availability.
There are few prep works that we do to make this kheer even easier:
Prepare the Milk:
In a grinder/blender jar. Add pitted dates, whole green cardamom, and milk.
Pulse to form thin date milk and keep aside.
Roast the Makhana:
Heat ghee/oil in a wok/kadhai and saute the makhana for 2 minutes (stirring continuously).
Roast them till golden brown and remove them from the wok.
Now, divide the roasted makhana into two parts.
Chop the 1st half of the roasted makhana into bite-size pieces.
Blend the 2nd half of the roasted makhana into fine powder.
Make the Dates Phool Makhana/Foxnuts Kheer:
Heat some ghee in the same wok/kadhai and roast the chopped almonds and raisins along with cardamom powder.
Then, add the prepared dates milk and saute on low heat for 2-3 means.
Add chopped makhanas and saute for another 2-4 minutes.
Now, add the powdered makhanas and stir everything. Let this cook for 3-4 minutes and the kheer will soon start to become thick.
After it’s slightly thick, turn off the heat and transfer the kheer to the serving bowl.
Garnish and Serve:
Garnish your kheer with chopped almonds, raisins, saffron strands, cardamom seeds, and silver foil. Serve warm or chilled, based on your preference (We looove having it chilled in the fridge for some time for that perfect rabri like consistency).
Dairy-Free Option:
For those who are lactose intolerant or following a vegan diet, you can substitute dairy milk with almond milk or coconut milk. These options not only make the dessert lighter but also add a unique flavor.
Adjust Sweetness:
If you prefer a sweeter kheer, you can add more dates or a natural sweetener like stevia or monk fruit. Avoid using refined sugar to maintain the diabetic-friendly quality of the dish.
Fasting Recipe:
This kheer is ideal for fasting as it uses minimal ingredients and no refined sugar, making it light yet filling.
Consistency:
If you prefer a thicker consistency, simmer the milk for a longer time. For a thinner kheer, you can add extra milk.
Customize with Spices:
While cardamom is the traditional choice, you can also add a pinch of cinnamon or nutmeg for an extra layer of flavor and warmth.
Shahi Dates Makhana Kheer is not only a tasty dessert but also a nutritious option for those who want to indulge without guilt.
With its rich flavor and natural sweetness, this kheer is perfect for festivals, special occasions, or simply to satisfy a sweet craving.
Packed with the goodness of makhana and dates, it’s a treat that everyone in the family will love.
