With the monsoon season in full swing in India and talking to family/friends back home, the thing I MISS the most after them is Indian Street Food.
They are so easily available in any Indian city/town and the variety you have is endless.
These ‘Masala Cheese Corn Chaat’ are an extremely popular Indian street food, especially during this season.
It’s a mix of tangy, spicy, and sweet flavors and goes perfectly with hot chai whether you are alone or enjoying with loved ones.
It’s also a BIG BIG hit with kids because of it tangy-sweet flavors.
As mentioned above, this is a lighter recipe and can be made within 15 minutes. Whether you have frozen or fresh corn, it’s absolutely simple. Here’s what you need:
You can make them with either frozen sweet corn kernels or fresh ones. Just keep in mind, if using frozen, then you need to thaw them beforehand.
Then squeeze excess water out of it using a sieve or cloth.
Then we slightly cook the corn to remove that rawness (has to be done for either variety being used).
Then add the cooked corn, seasoning, lemon juice, cilantro, cheese in a large bowl.
Mix everything using a large spoon/fork.
Do the taste test for seasoning or cheese.
And you are ready to serve them
You can serve them hot or cold, as either work as per your taste.
They work great as Picnic snacks/potluck appetizers or light lunches too.
These can be stored in fridge for upto 2 days.
