Easy Fall Pasta Salad is a mix of roasted fall veggies like sweet potatoes, brussels sprout, broccoli with cranberries, bacon, pecans, etc. Perfect for Thanksgiving Salad and made using highly nutritious seaweed pasta from Blue Evolution.

Thanksgiving is just around the corner and I’m here with this delicious and Easy Fall Pasta Salad recipe that makes a perfect side for your Holiday menu or a quick healthy lunch.
What I love most about this recipe (apart from the flavors) is that it’s a medley of gorgeous colors and high in antioxidants!
Before we begin, I wanted to talk a little about the ‘green pasta’ you’ll are seeing as I was Soooooo excited to try this ‘Seaweed Pasta’ from a local Bay Area company called – Blue Evolution.
More than excited, I was happily intrigued and had to try this pasta asap as why not add more nutritious food to your Holiday parties.
I also came to know that not only is this local, the company is also non-GMO certified but also 100% sustainable – More Kuddos to them!!!
So, for ALL my seaweed lovers, nutritious food lovers & pasta lovers, you GOTTA try this Blue Evolution Seaweed Pasta (I’m talking more about the company below).
So, now let’s get back to the recipe so that you’ll can try this asap.
The ingredients are really easy and I’m adding a mix of colorful veggies (the Holiday Favorite) along with cranberries, nuts, and bacon.
I’m using Turkey bacon to make it light and easy and actually goes extremely well with all your Thanksgiving sides.So matching their theory, Blue Evolution have a ‘Brand New Packaging’ with a new seaweed logo.
They have also highlighted “high in iodine and a good source of iron and magnesium” nutritious details on every Blue Evolution Pasta with Superfood Seaweed boxes.
The process to make the recipe is very easy and uses simple everyday ingredients.
Also, adding the Seaweed pasta makes this recipe even more nutritious n gorgeous too 🙂
We start by cooking the pasta as per package instructions (which is very similar to any regular pasta recipe)
While the pasta is cooking, roast the vegetables.
For roasting the vegetables, add them in a bowl along with olive oil.
Mix everything and add the mix vegetables to the air fryer basket or baking tray.
Air Fry for 13 minutes or bake for 13 minutes at 360F
Once the roasted veggies and pasta is ready, you need to just add and mix everything.
So, in a large bowl, add the roasted veggies, chopped onions, bacon, cranberries, pecans, and pasta.
Add feta cheese (or any other cheese you like) along with salt + pepper.
Mix everything using a large fork
Once everything is mixed, just transfer the Fall pasta salad to a serving bowl and enjoy.
