Thanksgiving is just around the corner and I’m here with this delicious and Easy Fall Pasta Salad recipe that makes a perfect side for your Holiday menu or a quick healthy lunch.

What I love most about this recipe (apart from the flavors) is that it’s a medley of gorgeous colors and high in antioxidants!

More than excited, I was happily intrigued and had to try this pasta asap as why not add more nutritious food to your Holiday parties.

So, now let’s get back to the recipe so that you’ll can try this asap.

What we need for Easy Fall Pasta Salad:

  • Pasta, I’m using Blue Revolution Seaweed Pasta
  • Veggies: sweet potatoes, brussels sprout, broccoli, onion
  • Cranberries
  • Bacon
  • Nuts: like pecans, pepitas, and dried cranberries
  • Honey
  • Salt + Pepper

Easy Fall Pasta Salad Ingredients

The ingredients are really easy and I’m adding a mix of colorful veggies (the Holiday Favorite) along with cranberries, nuts, and bacon.

I’m using Turkey bacon to make it light and easy and actually goes extremely well with all your Thanksgiving sides.

So matching their theory, Blue Evolution have a ‘Brand New Packaging’ with a new seaweed logo.

The Process to Make Fall Pasta Salad Recipe:

The process to make the recipe is very easy and uses simple everyday ingredients.

Also, adding the Seaweed pasta makes this recipe even more nutritious n gorgeous too 🙂

We start by cooking the pasta as per package instructions (which is very similar to any regular pasta recipe)

While the pasta is cooking, roast the vegetables.

For roasting the vegetables, add them in a bowl along with olive oil.

Mix everything and add the mix vegetables to the air fryer basket or baking tray.

Air Fry for 13 minutes or bake for 13 minutes at 360F

Once the roasted veggies and pasta is ready, you need to just add and mix everything.

So, in a large bowl, add the roasted veggies, chopped onions, bacon, cranberries, pecans, and pasta.

Add feta cheese (or any other cheese you like) along with salt + pepper.

Mix everything using a large fork

Once everything is mixed, just transfer the Fall pasta salad to a serving bowl and enjoy.

Easy Fall Pasta Salad is a mix of roasted fall veggies like sweet potatoes, brussels sprout, broccoli with cranberries, bacon, pecans, etc. Perfect for Thanksgiving Salad.

Total Time 25 minutes

Ingredients

  • 1 Cup Cooked Blue Evolution Seaweed Pasta*
  • 1 Cup Chopped Sweet Potatoes
  • 1 Cup Chopped Brussels Sprouts
  • 1 Cup Chopped Broccoli
  • 1/2 Cup Cranberries
  • 6 Slice Turkey Bacon
  • 1/4 Cup Feta Cheese
  • 1 Tbsp Honey
  • 3 Tbsp Chopped Pecans
  • 2 Tbsp Pepitas
  • 1 Tsp Salt, use as per taste
  • 1 Tsp Pepper
  • 2 Tbsp Olive Oil

Instructions

Roast the Veggies:

I'm using an Air-Fryer but this can be done in an oven too (at the same temperature):

  1. In a large bowl, add chopped sweet potatoes, brussels sprouts, broccoli, oil and mix everything.
  2. Transfer to Air Fryer basket and air-fry for 13 minutes at 360F.
  3. After 6 minutes, open the basket, stir everything and air fry for the remaining 7 minutes.
  4. Remove the roasted veggies from air-fryer.

Make the Easy Fall Pasta Salad

  1. In a large bowl, add the roasted veggies and the remaining ingredients.
  2. Mix everything and give it a quick taste test (for seasoning).
  3. Transfer the salad to a serving bowl and enjoy.

Notes

* Cooked Pasta: cook as per package instructions and keep aside.

    That looks so delicious. All those veggies but I would trade off the bacon for fake bacon. I love a good colorful dish
