These family – friends favorite Best Ever Chewy Coconut Chocolate Chip Cookies are going to make your Friday’s even sweeter today.

I’ve been making these cookies for more than 10years now and there has not been a single person who didn’t like them. 

So What Makes these Cookies that Special?

It’s that rich ‘coconut flavor’ along with perfectly stuffed chocolate chips that give you a good chewy bite. 

To add that rich flavor, I’m adding a mix of coconut sugar with coconut oil (you can use olive oil or canola oil too).

So before we discuss any further, let’s quickly grab these ingredients for our cookies.

Chewy Coconut Chocolate Chip Cookies Ingredients:

  • All-Purpose Flour
  • Coconut Flakes, I’m using less sweetened flakes.
  • Chocolate Chip
  • Baking Powder + Baking Soda
  • Pecans, optional
  • Olive Oil
  • Butter
  • Coconut Sugar, optional. you can use regular sugar too

How to Make Chewy Coconut Chocolate Chip Cookies:

I feel all the cookies recipes are so simple and easy to make, mine is no exception 🙂

  1. You start with preheating the oven.
  2. Mixing Dry ingredients like baking soda, powder, and flour together.
  3. Then whisk the wet ingredients together 
  4. Then add the dry ingredients to wet ingredients. Mix and fold everything.
  5. Then scooping about 8-9 cookies and placing them 2 inches apart on lined cookie sheet.
  6. Baking for 8-9 minutes and then cooling the cookies for 2 minutes. 
  7. Enjoying the cookies

Extra Tips to Make the Cookies Perfect Everytime:

Coconut Flakes: I’m using unsweetened coconut flakes but you can use sweetened coconut flakes too.

Olive Oil: you can use olive oil or any light oil like canola oil, vegetable oil or simply full coconut oil.

Coconut Sugar: I’m using light brown coconut sugar, but you can use ‘brown sugar’ or plain white sugar too.

Vanilla Essence: can use coocnut essence too.

Chewy Coconut Chocolate Chip Cookies: extremely delicious and best ever chunky, chewy cookies that's filled with coconut, chocolate chip, and little pecans. Totally addicting and ready in 20 minutes - makes 18 medium cookies.

Total Time 20 minutes

Ingredients

  • 1/4 Cup Coconut Flakes *
  • 1/2 Cups Chocolate Chips
  • 3 Tbsp Cup Pecans

Dry Ingredients:

  • 1½ Cups All-Purpose Flour
  • 1/2 Tsp Baking Soda
  • 1/4 Tsp Baking Powder
  • Pinch of Salt

Wet Ingredients:

  • 1/2 Cup packed Coconut Sugar **
  • 2 Tbsp Unsalted Butter - at room temperature
  • 1/4 Cup Olive Oil ***
  • 2 Tbsp Coconut Oil
  • 1 Large Egg – Room temperature
  • 1 Tsp Vanilla Essence ****

Instructions

Prep Work:

  1. Preheat oven to 350F (190 C)
  2. Add baking soda and baking powder in the all-purpose flour bowl and whisk to combine. Keep aside

Mix the Wet Ingredients:

  1. Add the egg in In a large bowl and whisk.
  2. Then add olive oil, coconut oil, butter to the whisked eggs and whisk everything together for 1/2 minute.
  3. Now add sugar to this mixture and whisk for another 1/2 minute.

Make the Chewy Coconut Chocolate Chip Cookies:

  1. Take the wet ingredients mixture and add 1/2 cup flour to it. Gently fold and mix the flour and egg mixture till well combines.
  2. Now add coconut flakes, chocolate chip, and pecan along with remaining flour.
  3. Fold and mix everything to a cookie consistency. (If the dough feels too hard you can add 2tbsp milk to it).
  4. Take an oiled/buttered or lined cookie sheet and an ice-cream scoop (you can use spoons too).
  5. Scoop the cookie dough using the ice-cream scoop and place it on the cookie sheet.
  6. Similarly, place more cookie dough about 2 inches apart (giving them room to expand when heated).
  7. Bake the cookies for 8-9 minutes.
  8. Once baked, remove the cooking sheet from oven and place the cookies on a wire rack to cool (takes about 2 minutes).
  9. Once cooled, serve and enjoy
