Curried Chicken Cutlet – Chicken Patties
What is Curried Chicken Cutlet ?
They are mince/ground chicken patties made using curry flavor, spices, potato, onion, ginger garlic paste and then coated with a herbed bread mixture.
Definitely one of my goto recipe using basic ingredients available in most of our kitchens.
The addition of crispy fried onions along with fresh coriander/cilantro/parsley gives it a very distinctive delicious taste.
1/4 Cup Fresh Coriander Leaves – thinly chopped – Optional
1 Large Green Chili – thinly chopped – Add as per taste – OPTIONAL
Powdered Spices:
1 Tsp Curry Powder
1 Tsp Red Chili Powder
1/2 Tsp Black Pepper Powder
2 Tsp Salt (As per taste)
For Bread Coating:
4 Slices of Bread – You may use any plain flavor bread
3 Tbsp of A.P Flour – I’m using whole wheat, you may use all-purpose flour
1/2 Cup Crispy Fried Onions
1/4 Cup Coriander Leaves – dry or fresh
1/2 Tsp Salt
1/2 Tsp Pepper
For Egg Wash:
2 Eggs
4 Tbsp Water
1 Tbsp Corn Flour
Step by Step Curried Chicken Cutlet Process
Make the Bread Coating: In a food processor, pulse together the “bread coating ingredients” to a thin crumbly powder and keep aside in a bowl.
Make the Egg Wash: In a large bowl, add eggs, water and cornflour. Whisk to form a smooth paste.
Make the Curried Chicken Cutlet – Chicken Patties
In a large bowl, add “Chicken Cutlet Ingredients”, “Powdered Spices” and mix everything evenly.
Take 5 Tbsp (1/4 cup) of this paste and form into the desired shape (round/oval/rectangle/any).
Take the chicken cutlet and place it in the eggwash bowl. Coat on both sides using a spoon.
Follow the above step till all the cutlets are made and coated with egg wash.
Place the egg coated cutlet into the bread mixture. Evenly coat on both sides and pat with hands to form a thick even cutlet (this also removes any extra coating).
Follow steps above till all cutlets are coated with bread mix.
If time permits, refrigerate this uncooked cutlet for 15 minutes so that the coating sets.
Fried Curried Chicken Cutlet:
Now heat a large nonstick pan on high for 2 minutes and pour 3 tbsp oil.
Place about 2 uncooked chicken cutlets in it.
Shallow fry on both sides till they are evenly brown and the chicken is cooked (takes about 3-4 mins for each batch of 2 cutlets to cook on medium heat)
Baked Curried Chicken Cutlet:
Preheat oven to 180 C (350F).
Place all the coated uncooked curried chicken cutlets on a baking tray.
Bake for 15-17 minutes (turning the cutlets after 7 minutes to evenly cook both sides).
Remove once the chicken cutlets are cooked.
Air Fryer Curried Chicken Cutlet:
Preheat oven to 180 C (350F).
Place 1-2 uncooked cutlets in your air fryer basket (depending on the size of your air fryer).
Air Fry for 12-15 minutes (check in between to prevent extra browning).

Notes
Ground Chicken - You may take chicken breast and pulse in food processor to make ground chicken.
Ginger-Garlic Paste – You may use fresh or store-bought paste or even dry ginger + garlic powder (1/4tsp each) as per availability
A.P Flour - you can use gluten-free flour or even whole wheat flour
Crispy Fried Onions – Easily available in stores or can be made at home by frying thinly sliced onions coated in flour.
