Monster Eye Cake Ingredients:

To make this easy Halloween monster eye cake, you’ll need just a few simple ingredients. Here’s a breakdown of everything you’ll need:

  • Unsweetened Cocoa Powder 
  • Yogurt (optional): makes it extremely soft and moist.
  • Egg
  • Water
  • Olive Oil
  • Butter (optional): very small quantity 
  • Sugar – or any sugar substitute of choice
  • Baking Powder
  • Baking Soda
  • Pinch of Salt
  • Vanilla Extract

For Decoration: 

  • Candy Eyes or Eyeballs (available at most grocery stores during Halloween)
  • Pretzel Sticks

 

Step by Step Instructions to Make the Monster Eye Cake (for Adults or Kids):

This is such a fun cake and it is equally mess-free to make with these instructions:

Step 1: Prepare the Cake Batter

Preheat your oven to 350°F (175°C). Grease and flour a 7-inch cake pan (use any shape you like circular, rectangle, square or even bundt pan).

Sift the flour, cocoa powder, baking powder, and salt in a large bowl. Set aside.

In another bowl, cream together the olive oil, softened butter, and sugar until light and fluffy. This should take about 2-3 minutes with a hand mixer or 4 minutes with a hand whisk.

Add the yogurt, and egg (if using), one at a time, beating well after each addition. Then, stir in the vanilla extract.

Gradually add the dry ingredients to the wet ingredients. Beat just until combined. Be careful not to over-mix the batter (as over-mixing makes the cake flat or dense).

Pour the batter into the prepared pan and smooth the top.

Add the monster eyes or eyeballs along with pretzel sticks on the top of the cake. (distribute evenly all over the cake or any pattern you desire).

Step 2: Add the Monster Eyes & Bake the Cake:

Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

Once baked, remove from the oven and allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. (This step is extremely important for a perfect slice with no cracks while cutting the cake).

Serve chilled.

Useful Tip for Candy Eyes:

  1. If you can’t find candy eyes, you can make your own by piping small rounds of white and black frosting for a DIY version.
  2. Simply add white and black frosting in separate piping bags or get the gel ones.
  3. Now, draw a big white circle and then top it with a dot in the center with black frosting or color.
  4. Once you have pipped all candy eyes, place the cake in the fridge for the frosting or color to set.
  5. Serve chilled.
