  • beetroot, peeled and thinly chopped
  • carrots, peeled and thinly chopped
  • radishes, washed and thinly chopped
  • 1/2 lemon
  • mustard oil
  • vinegar

Powdered Spices:

  • red chili powder
  • turmeric powder
  • hing powder
  • mango powder (amchur)
  •  salt – as per taste

Whole Spices:

  • coriander seeds
  • mustard seeds
  • cumin seeds
  • fennel seeds (saunf)
  • nigella seeds (kalonji)
  • fenugreek seeds (methi)
  • ajwain seeds
  • black peppercorn (optional)

Mango Powder (amchur): you can skip and add vinegar or more lemon. Its added as a preservative.

Beetroot Carrot Radish Instant Pickle Process:

Before we begin the pickling process, let’s prepare the vegetables:

  1. Wash and peel the beetroot, carrots, and radishes. Chop them into small, uniform pieces.
  2. Transfer to a kitchen towel and pat dry to remove any excess water. Leave open till you prep other steps.

Pickling Process:

Let’s now dive into the exciting pickling process of our beetroot carrot radish pickle:

  • Heat a pan over medium heat and add whole spices seeds and saute. Sauté for a minute until the spices release their aroma (over low flames).
  • Turn off the heat transfer it to a blender bowl and let it cool completely.

Roasting Instant Indian Pickle Whole Spices

  • Add powdered spices in the roasted spices and blend to form a fine powder.
  • Keep the mix aside.

  • Heat the same pan and add mustard oil.
  • Heat it for a minute or till it starts smoking and then turn off the heat. Cool this completely.
  • Heat the same oil add the chopped vegetables to the pan and cook for 2 minutes, stirring occasionally. (The vegetables should retain their crunch).
  • Add the spice mix and saute everything for another 2 minutes.
  • Then add amchur powder and vinegar and mix well. Turn off the heat and let the pickle cool down completely.
  • Transfer the pickle to a clean, sterilized glass jar and store it in a cool, dark place for at least 3-4 days to allow the flavors to meld together.
  • After the resting period, your beetroot carrot radish pickle is ready to be enjoyed!

Ingredients

  • 1 medium-sized beetroot, peeled and thinly chopped
  • 2 medium-sized carrots, peeled and thinly chopped
  • 2 radishes, washed and thinly chopped

  • 2 tablespoons vinegar
