Fudge doesn’t have to be a guilty pleasure anymore. This almond chickpea fudge is a healthier take on the classic treat, and it’s perfect for satisfying your sweet tooth or snack pangs.
Made using real, simple and everyday ingredients and ready in minutes. Here’s what we need:
Chickpeas might seem like an unusual ingredient for fudge, but they actually work really well. It creates a creamy, nuttier, and smooth texture.
Plus, they’re a great source of protein and fiber!
You need to first dry roast the chickpea for 6-7 minutes on low-medium flames. (this step helps bring out the smokey-nuttier flavor of chickpea and removes the rawness).
Then Heat the almond butter in a microwavable bowl until melted (3-4 minutes).
Remove from the microwave and add the roasted chickpea flour and maple syrup.
Whisk everything into a smooth, lump-free batter.
Pour in the lined baking dish or any square or rectangle container (can use pyrex containers too).
Refrigerate for 40 minutes and then slice into bite-size squares.
Enjoy and keep refrigerated for longer shelf life.
