What is Indian Style Egg Chow Mein?
It’s a popular dish that combines the flavors of Indian and Chinese cuisine amazingly. Made using Chinese sauces along with Indian spices, mixed veggies, and egg.
Can be easily customized to suit individual tastes. You can add more vegetables, adjust the spice level, or even add some protein such as chicken or shrimp to make it a more substantial dish.
It’s one of my MOST Favorite Goto recipes, especially on a crazy busy day or even a lazy one 😉
Also, I ALWAYS make it using spaghetti as it’s an extremely common kitchen pantry ingredient.
Ingredients for Egg Chow Mein:
One of the MOST important things for me to make this recipe is that all the ingredients are easily available in your kitchen:
Eggs
Spaghetti Noodles: you can use egg noodles too
Mixed Vegetables: like carrots, beans, cabbage, onion, green bell pepper (capsicum)
Sauces: soy sauce, hot-spicy sauce, ketchup (if you like a hint of sweetness).
Spices: turmeric, salt, chili pepper, black pepper
Oil: for stir fry and making eggs
Topping: Sesame seeds, fresh cilantro, and green onions (all is optional)
How to Make The Recipe:
I’m dividing the recipe into 2 parts:
Cooking the Eggs: I make a simple omelet seasoned with spices and sauce.
Cooking Veggies: then quickly stir fry the veggies in sauce and spices. Then toss in the cooked chow mein / spaghetti + omelet and stir fry everything together.

This dish is perfect for a quick weeknight dinner or lunch. You can also add your own twist to it by adding other vegetables or meat of your choice or adjusting the spice level to suit your taste.

Indian Style Egg Chow Mein Recipe (using spaghetti noodles)
Indian Style Egg Chow Mein Recipe (using spaghetti noodles): spicy, super-quick, and extremely popular Indian street style chow mein recipe using eggs, mixed veggies, and sauces. Can be stored in fridge for 2 days.
Ingredients
- 1/2 pack of spaghetti noodles *check notes
- 3 eggs
- 1 large onion, thinly sliced
- 1 medium capsicum, thinly sliced
- 1 medium carrot, thinly sliced
- 5-6 Green Beans, thinly sliced
- 1 tsp ginger-garlic paste
- Oil for frying
Sauces:
- 2 tsp soy sauce
- 1 tbsp red chili sauce
- 1 tsp white vinegar
Seasoning:
- 1/2 Tsp black pepper powder
- 1/2 Tsp chili flakes
- Salt to taste
Instructions
Prep Work: Make the spaghetti as per package instructions. Drain and keep aside.
Make the Omelet:
- Heat a pan and add oil.
- In a bowl, whisk together 3 eggs with turmeric, black pepper, and a pinch of salt.
- Add the whisked egg to the hot pan and cook the omelet till golden on both sides.
- Once cooked, turn off the heat and cool the omelet.
- Cut the omelet into thick slices (index finger width) using a scissor or knife. Keep aside.
Prepare the Egg Chow Mein:
- Heat 1 tbsp oil and add ginger+garlic paste.
- Add thinly sliced onions, carrots, and beans and stir fry for 2 minutes on medium heat.
- Add thinly sliced capsicum, and green onions and stir fry for a minute.
- Add the sauces, salt, and chili flakes and stir-fry everything together.
- Add sliced omelet and stir everything quickly and lightly not to break the omelet.
- Check for seasoning and sauce (add more if you require).
- Turn off the heat and transfer the chow mein to the serving bowl.
- Sprinkle sesame seeds, chopped cilantro, and green onions on top.
- Serve and enjoy.
Notes
Spaghetti noodles: you can use egg noodles, any thin asian noodles made with flour, ramen, or maggi.
Vegetables: can be skipped altogether or added as per choice.
Chili Sauce + Ketchup: you can use either or both (as I'm using)
Soy Sauce: if need be, you can replace it with tamari.
White Vinegar: you can use rice vinegar or lightly flavored vinegar too.
Turmeric: is optional, for color and slight Indian taste.
Ginger + Garlic paste: you can use dry powder instead.

Wow! This dish looks absolutely delicious! I just love everything in this recipe! It’s like a masterpiece. For me an instant favorite!
