Eggless Caramel Bread Pudding – Bread Flan Recipe: steamed pudding/flan made using custard (instant store-bought custard powder), milk, bread, and sugar. Super easy and perfect for Valentines.
Valentine is literally knocking on the door and like every year, here I’m with a super quick (almost 30 minutes recipe)Eggless Caramel Bread Pudding – Bread Flan Recipe.
It’s a gorgeous saffron-colored pudding/flan that is made using 4 simple ingredients that are available in almost EVERY House and literally require not much cooking (unlike a regular flan or pudding).
You can definitely make the custard using the traditional route (milk, egg and sugar) but for my instant desserts, I like to use store-bought custard powder.
Ingredients for Eggless Caramel Bread Pudding – Bread Flan Recipe:
2 Tbsp Instant Vanilla Custard Powder
2 Cups Plain Milk
4 White Bread Slices – edges removed
1/2 Cup Sugar
Ingredients For Steaming the Caramel Bread Pudding:
1 Large Pot
1 Small Stand
2 Medium Baking Molds
2 Medium Sheet of Foil – to cover the molds
2 Cups Water – to steam the pudding
How to Make Eggless Caramel Bread Pudding – Bread Flan Recipe:
Although it’s a simple recipe but few important steps need to be done correctly to get the desired luscious caramel result.
Hence, I’m diving it into 6 Main Steps so that the result is a perfect pudding is everytime!
Make the Bread Mixture:
In a blender jar add white bread slices (edges removed) and pulse twice to form a smooth powder consistency.
Keep this aside.
Make the Instant Custard:
Dissolve 2tbsp instant custard powder with 2tbsp milk in a bowl. Keep aside.
Heat milk in a large pot.
As soon as it boils, reduce the flame and adds the dissolved instant custard powder.
Whisk/stir to combine and cook this for 30 seconds.
Turn off the heat and let the custard cool and thicken for 2 minutes.
Keep this aside.
Make the Custard-Bread Mix:
Take the slightly warm custard and mix the bread mixture.
Whisk/stir to mix the bread-custard into a thick smooth mixture (looks like a thick smoothie consistency).
Keep this aside.
Make the Caramel:
Place sugar in a medium pot/pan and heat it on medium flame.
Keep stirring for 30 seconds.
Add 1tsp water and keep stirring till the sugar begins to dissolve (takes 2 minutes).
Now stir continuously and reduce the flame to the lowest setting.
Stir till you see a golden caramel color.
Heat the sugar till it can easily coat the back of a spoon.
Once that’s done, turn off the heat.
Make the Eggless Caramel Bread Pudding – Bread Flan Recipe:
Take a baking mold/dish and pour half of the hot caramel sugar in it.
Using a cloth/glove, Swirl the bowl till the sugar coats the bottom of the mold.
Add 5tbsp custard-bread mix and spread evenly.
Similarly, fill the second molkd.
Now cover each mold with a foil (making sure top is smooth and you fold the foil in the bottom of mild).
Keep the covered molds aside.
Steam the Eggless Caramel Bread Pudding – Bread Flan Recipe:
In a large pot/wok, add the ring/plate in the bottom.
Now add water and place the pot on the stovetop.
Boil the water and carefully place 1 covered mold on top of the plate (water should be surrounding the mold not submerging it.)
Now cover the pot/wok using a large plate or lid and let this steam on low-medium flame for 16 minutes.
After 16 minutes, remove the mold (using a glove/thick cloth).
Similarly, steam the other mold.
Once both the molds are steamed, cool them on a slab/rack.
Once cool to touch, place them in the fridge for 2hrs (this helps set the custard and give it that luscious caramel).
Once chilled, remove the custard molds from the fridge and remove the foil.
Place a plate on top of the mold and flip it upside down.
Lightly pat the bottom of the mold to release the Caramel Bread Pudding on the plate (it will release the golden caramel all around it).
Serve fresh or top with whipped cream and enjoy

Instant Vanilla Custard Powder – you can use plain or lemon flavor
Plain Milk – you can take full fat/whole milk or any thick nut milk
White Bread Slices – edges removed. You can use white buns/pav rolls too, just remove the brown edges/top.
Sugar – you can use brown sugar or coconut sugar too.
