It’s that time of the year where we eat, share and love everything Fall inspired, like these Chewy Mint Chocolate Chip Cookies that everyone we know love!

It’s Big and I mean a Big part of our holiday gifts, care packages, kids gift baskets, party staple and of course daily coffee break.

And the secret behind this and many of our Chewy cookies is Karo® Corn Syrup – yes, we not only make delicious pies using it but many more desserts like these cookies.

The reason for using Karo® Corn Syrup in our cookies recipe is that it guarantees the best, chewiest cookies in no time and not much effort.

So as soon as we enter the fall season, we start the holiday baking with these cookies….kind of our own little family tradition for years now.

Ingredients for Chewy Mint Chocolate Chip Cookies:

  • Karo® Corn Syrup
  • All-Purpose Flour
  • Semi-Sweet Chocolate Chips
  • Mint Chocolate 
  • Mint Extract
  • Egg
  • Green Color – optional
  • Baking Soda
  • Sugar
  • Butter

As you can see, the ingredients are fairly simple and this recipe makes 18 medium cookies in 22 minutes (if using 1 tray at a time with 9 cookies).

How to Make the Mint Chocolate Chip Cookies:

I always start by whisking egg, butter/oil and sugar together.

Then add the Karo® Corn Syrup and whisk everything.

There is one slight touch I always add, I like to add few drops of green color to the cookies for that hint of green.

Then I add the chocolate chips along with mint chocolate or mint extract (whichever you are using).

Then add the flour, baking soda and mix everything.

Once the cookie batter is ready, you pre-heat the oven at 350F.

Start scooping 1.5 Tbsp batter on cookie sheet. I like to keep 1-inch gap (or slightly more) between each cookie.

The tray that I use accommodates 9 cookies and you bake them for 11 minutes.

Here you go, your easy peasy Chewy Mint Chocolate Chip Cookies are ready in minutes.

The only tough part is waiting for 1-2 minutes to cool them slightly before you dig in.

Ingredients

  • ¼ Cup Karo® Corn Syrup
  • 2 Cups All-Purpose Flour
  • 1 Cup Semi-Sweet Chocolate Chips
  • ½ Cup Mint Chocolate - chopped
  • 1 Tsp Mint Extract - optional
  • 1 Egg
  • 2 Drops Green Color - optional
  • 1 Tsp Baking Soda
  • ¾ Cup Sugar
  • ¾ Cup Butter

Instructions

  1. Preheat oven to 350°F.
  2. In a large bowl, whisk eggs, butter, and sugar until fluffy. 
  3. Add corn syrup, green color, mint extract and whisk for a minute.
  4. Add chocolate chips, chopped mint chocolate and mix lightly.
  5. Now add 1 cup dry ingredients until combined.
  6. Add the remaining dry ingredients and mix everything evenly.
  7. Drop dough by heaping tablespoonfuls onto a baking sheet. 
  8. Bake for 11 minutes or until lightly browned. 
  9. Cool 1 to 2 minutes on pan; remove from pan to wire rack.
  10. Serve Fresh or store in an air-tight jar.
