Ingredients for Chewy Mint Chocolate Chip Cookies:
Karo® Corn Syrup
All-Purpose Flour
Semi-Sweet Chocolate Chips
Mint Chocolate
Mint Extract
Egg
Green Color – optional
Baking Soda
Sugar
Butter
As you can see, the ingredients are fairly simple and this recipe makes 18 medium cookies in 22 minutes (if using 1 tray at a time with 9 cookies).
How to Make the Mint Chocolate Chip Cookies:
I always start by whisking egg, butter/oil and sugar together.
Then add the Karo® Corn Syrup and whisk everything.
There is one slight touch I always add, I like to add few drops of green color to the cookies for that hint of green.
Then I add the chocolate chips along with mint chocolate or mint extract (whichever you are using).
Then add the flour, baking soda and mix everything.
The batter always looks more greener but once baked, the cookies tend to have just a hint of green inside and outside
Once the cookie batter is ready, you pre-heat the oven at 350F.
Start scooping 1.5 Tbsp batter on cookie sheet. I like to keep 1-inch gap (or slightly more) between each cookie.

The tray that I use accommodates 9 cookies and you bake them for 11 minutes.

Ingredients
¼ Cup Karo® Corn Syrup
2 Cups All-Purpose Flour
1 Cup Semi-Sweet Chocolate Chips
½ Cup Mint Chocolate - chopped
1 Tsp Mint Extract - optional
1 Egg
2 Drops Green Color - optional
1 Tsp Baking Soda
¾ Cup Sugar
¾ Cup Butter
Instructions
Preheat oven to 350°F.
In a large bowl, whisk eggs, butter, and sugar until fluffy.
Add corn syrup, green color, mint extract and whisk for a minute.
Add chocolate chips, chopped mint chocolate and mix lightly.
Now add 1 cup dry ingredients until combined.
Add the remaining dry ingredients and mix everything evenly.
Drop dough by heaping tablespoonfuls onto a baking sheet.
Bake for 11 minutes or until lightly browned.
Cool 1 to 2 minutes on pan; remove from pan to wire rack.
