The Process to Make the Cauliflower Nachos Recipe:

Once you have all these ingredients, the recipe is super easy to make.

  1. You need to wash all the fresh vegetables.
  2. Then, chop the cauliflower into a thin chip-like shape.
  3. Chop rest of the veggies.
  4. Roast the cauliflower in the oven to cook it slightly.
  5. Then, add all the other chopped veggies as a topping.
  6. Add the cheese and Mexican seasoning.
  7. Bake for another 7 minutes.
  8. Remove from oven and top with cilantro, avocado, and lemon juice.
  9. Serve fresh.

Sheet Pan Cauliflower Nachos Recipe: Made in under 20 minutes, extremely delicious, and light, these sheet pan cauliflower nachos are a perfect snack for any occasion, big or small. Gluten-Free

Prep Time 10 minutes
Cook Time 25 minutes
Total Time 35 minutes

Ingredients

  • 1/2 Whole Cauliflower Head
  • 1/2 Can Muir Glen Organic Fire Roasted Diced Tomatoes
  • 8 Mini Sweet Peppers
  • 1 Small Jalapeno
  • 1/2 Can Red Beans
  • 1 Medium Avocado
  • 4 Tbsp Cheese, use as per choice (I’m using a mix of cheddar and Parmesan)
  • 3 Tbsp Mexican Seasoning
  • Salt & Pepper as per taste
  • 2 Tsp Olive Oil, use any light oil
  • 1 Tbsp Lemon Juice
  • 1 Sprig of Cilantro for decoration

Instructions

Preheat the oven to 400F

  1. Place all the fresh veggies in a colander and wash thoroughly.
  2. Rinse the kidney beans and remove any excess water
  3. Trim the green leaves from the cauliflower and cut it into thin long pieces (looking like thick chips).
  4. Now, take mini sweet peppers and jalapeno and cut them into thin circles.
  5. Place the thinly chopped cauliflowers on a baking tray and sprinkle 2 tsp oil and 1 tbsp Mexican seasoning.
  6. Place in the oven and roast the cauliflowers for 12 minutes (we want them slightly cooked with golden brown tops)
  7. Remove the cauliflower from the oven (once the timer goes off) and let it completely cool.
  8. While this cools, take the avocado, remove the pit, and chop into tiny pieces. Keep in the fridge.
  9. Now, add red beans, Muir Glen Organic Fire Roasted Diced Tomatoes, chopped sweet peppers, and jalapeno over the roasted cauliflower.
  10. Sprinkle cheese and Mexican seasoning on top.
  11. Bake this for another 6 minutes (or till the cheese has melted).
  12. Remove the baked Cauliflower Nachos from the oven.
  13. Add chopped cilantro, avocado and lemon juice on top.
  14. Serve fresh and enjoy

    I am obsessed with those tomatoes – i swear they are the best canned tomatoes. And also, roasted cauliflower is already my fav – as nachos – um genius
