Ingredients
½ Cup any Flour to Roll Paratha
½ Cup Oil – Any Flavorless oil for sautéing the Paratha
For the Paratha Dough:
2 Cups Whole Wheat Flour (Atta)
1 Tbsp Carrom Seeds (ajwain)
1 Tsp Salt - use as per taste
1 Tbsp Oil
½ Cup Warm Water
For Palak Paneer (Spinach - Cottage Cheese) Filling:
1.5 Cups Chopped Palak (spinach) – Fresh or Frozen
½ Cups Crumbled Paneer (cottage cheese)
1 Tbsp Shredded Ginger (adrak)
1 Tbsp Coriander Powder (dhania powder)
1 Tsp Garam Masala - optional
1 Tsp Salt
1 Tsp Red Chili Powder –Optional

How to Make Palak Paneer Paratha:
I'm dividing the recipe into small parts to make it, even more, easier to make 🙂
Make the Paratha Dough:
In a large bowl, add all the dough ingredients and form a slightly firm dough.
Make 10-12 balls from the dough and keep aside.
Make the Palak Paneer Stuffing: (2 ways)
Method 1:
In a medium bowl, mix chopped spinach, crumbled cottage cheese, salt, red chili powder and make a smooth mix.
Method 2:
Heat a pan and add 1 tsp oil.
Add chopped spinach (palak) and saute for a minute.
Now add the spices and crumbled cheese (paneer) and saute everything for 2 minutes.
Turn off the heat and cool the mixture completely.
Make the Paratha:
Take dough balls and roll each of them into small discs (size of your palm).
Now take one disc at a time, mold it like a bowl in your palm and fill it with 1 Tbsp of prepared filling leaving some extra dough on the outside.
Close the tips of the formed bowl and make it into a ball of dough again. Repeat this step till all the dough balls are filled with filling.
Now roll each filled dough ball into a disc of 4-5 inch, keep aside.
Heat the non-stick pan on high and put one disc/paratha at a time.
As soon as you see bubbles on the side up, turn it around and dab the oil on it.
Now turn to the other side and dab oil on the other side too.
Saute till golden brown in color and repeat this step till all parathas are prepared.
