Growing up, every summer we eagerly used to wait with excitement for raw mangoes to arrive in the market so that we could get them home and make arrays of recipes.

And, this Sweet Spicy Mint Raw Mango chutney or Pudina Kairi chutney or Kacha Aam Pudina chutney (as it is popularly known in India) was always the recipe to begin with because of its simple ingredients and powerhouse taste.

The sweetness from jaggery and the spiciness of the green chilies with raw mangoes, spices and mint is just the perfect blend of flavors.

Mom used to make heaps and heaps of it and store it in the fridge for us and also to gift to family/friends.

Her recipes were extremely popular among all and every season people used to wait for delicious treats from our house to their.

So, this summer, the moment I saw raw mangoes, I knew I had to share her recipe with you.

Mint Raw Mango Chutney Ingredients:

Here are the simple ingredients for this chutney and lets get started then: 

  • Raw Mango 
  • Mint (Pudina)
  • Ginger
  • Fresh Green Chilies 
  • Sweetener of Choice – I’m using jaggery but you can use any sweetener of choice or skip the sweetness.
  • Spices: salt, black salt, red chili powder, cumin powder

How to Make Mint Raw Mango Chutney:

I feel these ingredients are so simple/common that this chutney can be made in a jiffy at any home. Here are the easy steps:

We start by washing the raw mangoes thoroughly and keeping it aside.

Then we wash the mint leaves properly (getting rid of any dirt or roots, if need be remove any other herbs added to the bunch.

Remove any hard stalks from the mint and we can just keep the leaves or very thin stalks.

Now, peel the mangoes.

Then we cut the mangoes into halves and scoop out the seed or the woody shell in between (the hardness of the seed depends on how big or raw the mango is. If you take smaller or younger raw mangoes, the seed is almost negligible).

Now, cut the raw mangoes into bite-size pieces.

Add the chopped mangoes, mint leaves, ginger stalk, green chilies, and pulse for 1-2 minutes to form a thick mix.

Now add jaggery and the spices in the jar with 4 tbsp of water and pulse everything to make a fine paste.

Adjust the salt/spices as per taste and keep it as thin or thick as per taste (I like it on a thicker side, so I add very little water).

Transfer to a serving dish and enjoy with your favorite snacks or sandwiches, wraps, etc.

Serving & Storage Suggestions for Pudina Kairi Chutney:

This chutney is a delightful combination of tangy, spicy, and aromatic flavors that can elevate any meal to the next level.

As mentioned above, since I love this chutney loads we make a huge batch of it and store it in various sizes of bottles to consume.

You can simply add it in any sterile or clean (dry) container/glass jar with a lid and store it in the fridge for a week.

Feel free to customize your raw mango mint chutney by your choice for spiciness, mint, and mango (tanginess).

Ingredients

  • 1 Medium Raw Mango (size of your palm)
  • 1/2 Bunch Fresh Mint (Pudina)
  • 1/2 inch Stalk Fresh Ginger
  • 1 Medium Green Chilies 
  • 1 tbsp Jaggery - you can use Sweetener of Choice or skip this ingredient.

Spices:

  • 1 tsp salt
  • 1/4 tsp pink himalayan salt (kala namak)
  • 1/2 tsp red chili powder
  • 1/4 tsp cumin powder

Notes

Raw Mango: I'm using 1 medium (palm size) mango, you can use 2-3 small mangoes too. adjust tanginess as per your taste.

Jaggery: you can use any sweetener of choices like sugar, brown sugar, honey, stevia, monk fruit, coconut sugar or any other sweetener or completely skip this ingredient.
