Peri-Peri Baby Corn Stir Fry or Piri-Piri Baby Corn
This dish is a celebration of spice, textures, colors, and flavors. It’s super easy to make and will make you fall in love with it instantly.
We have been making this recipe for quite some time now and this summer, it is number one of my list to share with you.
So this time, when I went to the market and I saw the fresh, tender baby corn, I knew this was coming next in line.
I’ve slightly quoted the baby corn with ‘corn flour’ and stir-fried in the beginning to give it a perfect crispy, slightly crunchy taste.
The sauce is a sweet mix of onion, bell peppers along with mild spices and then everything is stir-fried with the peri-peri sauce for a beautiful saucy texture that leaves you wanting more and more.
This can be made using either peri-peri sauce or peri-peri dry seasoning whichever is available.
Peri Peri Baby Corn Ingredients:
Join me in making this mouth-watering recipe and let’s gather these quick ingredients:
• Fresh Baby Corn
• Peri Peri Sauce or Piri Piri Seasoning – use as per availability
• Green Bell Peppers (Capsicum)
• Onion
• Olive oil – use any light oil of choice
• Spices salt and pepper
• Corn Flour – optional

Making the Piri Piri Baby Corn Recipe:
Once you have all the above ingredients, let’s get started with the cooking:
We start by washing the baby corn and patting it dry with a kitchen towel or leave in a colander for a few minutes to drain all the water.
Now, spread the baby corn in a large plate or bowl and sprinkle corn flour on it on both sides, to even coat them. Keep this aside.
Now, wash the onions and bell peppers (capsicum).
Peel the onion and slice it thinly. keep aside.
Cut the bell peppers and remove the seeds and top stem part. Cut them into thin slices and keep them aside.
Now, heat a wok or pan with some oil and reduce the heat to medium.
Place the corn flour-coated corn in it (be careful, the oil might splutter) and stir fry them for 2-3 minutes till golden brown on both sides.
Once, they are golden and crispy, remove the corn on a kitchen towel to soak any excess oil.

In the same pan, add more oil and add the sliced onions and bell pepper.
Stir fry them for two minutes.
Now add peri peri sauce or seasoning, salt, and pepper, and saute everything together.
Add the crispy baby corn and stir-fry everything together for 2-3 minutes on medium heat.
Add a splash of water if need be and stir.
Turn off the heat and transfer to the serving bowl.
Serve hot and enjoy

Instructions
Prepare the Veggies:
