Shrikhand is a traditional Indian dessert made from hung curd (Greek yogurt), sweetened and flavored with saffron and cardamom.
Here, I’m using my ‘Sugarfree Mango Shrikhand’, made at home, but you can use storebought shrikhand too or make one at home with this simple recipe.
Add mango to it, and you get Mango Shrikhand – also known as Aamrakhand. It’s thick, creamy, and luxurious, yet packed with protein from yogurt, making it a great option for a healthy indulgence.
This recipe was born out of a Sunday brunch experiment during mango season.
I had leftover homemade mango shrikhand from the day before and was craving something different from my usual breakfast bowl. That’s when the idea struck—what if I turned it into a mango parfait with granola?
I layered it in a tall glass, topped with juicy dusheri mango chunks (kind of sweet mangoes from UP, India), added a handful of crunchy granola, and finished with a drizzle of honey.
The result? A Mango Shrikhand Granola Parfait that looked as beautiful as it tasted—and it quickly became my go-to for guests and summer mornings alike.
To make this mango shrikhand granola parfait, you’ll need simple ingredients that pack big flavor:
For the Mango Shrikhand:
Thick Yogurt (curd), hung overnight or use Greek yogurt
Mango Pulp (fresh sweet mangoes or canned)
Powdered Jaggery or Stevia (for sugar-free)
Cardamom Powder
Mixed Nuts (optional)
For Assembling the Parfait:
Granola (homemade or store-bought)
Ripe mango, diced
Chia seeds or nuts (optional topping)
Honey or maple syrup to drizzle (optional)
Step-by-Step Instructions for Mango Granola Parfait
Step 1: Prepare the Mango Shrikhand or use my recipe link given above
If using homemade curd, hang it overnight in a muslin cloth to drain excess water. You should be left with thick yogurt.
Whisk it until smooth and creamy. Add mango pulp, powdered jaggery (or sweetener), cardamom, and saffron milk. Mix well. Chill it in the fridge.
Step 2: Chop the Mangoes
Peel and dice a ripe mango. You can use any sweet mangoes available to you
Step 3: Assemble the Parfait
In a glass or jar, start layering:
1. A spoonful of granola
2. A generous layer of mango shrikhand
3. A layer of diced mangoes and repeat the layers as desired
4. Top with more granola, chia seeds, and a drizzle of honey
Step 4: Chill or Serve Immediately
You can serve it fresh or chill it for 15–20 minutes. It’s perfect for meal prep and stays good in the fridge for 24 hours.
