Here are 3 main ingredients for this salad and the rest can be added as per your choice/availability. They are:
Zaatar:
a traditional Middle Eastern spice blend that typically includes thyme, oregano, sumac, and sesame seeds. Its earthy, tangy, and slightly nutty flavor profile makes it a versatile ingredient that can elevate a wide range of dishes, especially salads or meat.
It’s said to be rich in antioxidants and anti-inflammatory properties, hence good for digestion and boosting immunity.
Mango:
Use any sweet mango variety you have or like. Often referred to as the “king of fruits,” brings a burst of sweetness and a juicy texture to this salad. Mangos are packed with vitamins A and C, and fiber, which aids in digestion and helps keep you feeling full longer.

- Pistachio – you can use any nuts you like but pistachios go really well with these flavors.
- Lemon – use fresh if possible
- Seasoning – salt, chili flakes

- Add Lemon Juice: pour freshly squeezed lemon juice for the zingy flavor.
- Sprinkle Zaatar: sprinkle some more zaatar on top, add some more fresh herb mix for a burst of color and extra flavor. Serve immediately or refrigerate for later.

- 1.5 cups Boiled Chickpeas - check notes
- 1 large ripe mango, peeled and diced - check notes
- 1 tbsp of zaatar spice blend
- 2 medium cucumber, diced
- 1 small red onion, thinly chopped
- 1 large avocado - remove the pit and diced
- A handful of fresh parsley or cilantro, chopped
- A handful of fresh mint, chopped
- 4 tbsp shelled pistachios - thinly chopped
- Juice of 1 lemon
- Salt and chili flakes to taste - you can skip chili if need be
