What is Indian Curried Tofu Scramble:

‘Tofu’ was something I tried for the first time when I came to USA and I loved the taste and texture of it as it was very similar to our Desi Paneer (Indian cottage cheese).

I loved that it’s extremely easy to use in various styles/recipes, easily available, and is packed with protein. Especially as a vegetarian or vegan, it’s an awesome source of protein.

This is one of my GOTO recipes using tofu as it’s SUPER EASY … takes literally under 15 minutes to cook and it can be used in soooooo many ways.

If you haven’t yet tried it, you should definitely make my delicious version which is a mix of tofu with fresh vegetables, and then add the magic of ‘curry powder’ along with turmeric, chili powder, and salt to tantalize your tastebuds.

This delightful and nutritious dish is not only easy to prepare but also a perfect way to infuse your mornings with the rich and aromatic spices of Indian cuisine.

This recipe will be extremely helpful if you transitioning from egg eater to vegetarian/vegan. It gives you the same texture and kind of taste … so that you don’t miss the eggs in your diet.

Indian Curried Tofu Scramble Ingredients

Let’s dive into the details of this delectable breakfast option that will leave you satisfied and energized throughout the day. These are the required ingredients to make our scrumptious recipe:

  • TofuI’m using firm tofu, but can be made with soft tofu too.
  • Red Onion 
  • Tomatoes 
  • Green Bell Pepper 
  • Frozen Green Peas – you can use fresh peas too
  • Frozen Sweet Corn you can use fresh-boiled corn
  • Seasoning: turmeric powder, red chili powder, salt, curry powder, coriander powder.
  • Olive Oilfor making the recipe. use any light oil.
  • Optional: fresh coriander/cilantro and lemon juice.

Although I’ve mentioned the ‘cilantro + lemon juice’ as optional, but they do add a refreshing taste to our dish and balance the ingredients very well.

How to Make Curried Tofu Scramble

Let’s dive deep into making the easy recipe now and begin with these simple steps:

Prep Work:

  1. Crumble the tofu in a large bowl. You can make it as small or medium crumb as per choice. 
  2. Wash and pat dry the onion, tomatoes, and bell peppers using a kitchen towel or let it air dry.
  3.  Peel the Onion and chop all the veggies into bite-size pieces. Keep aside on a large plate.

Make the Scramble:

  1. Heat a medium nonstick pan or wok with oil.
  2. Add the chopped veggies along with frozen peas + corn.
  3. Cook the veggies for a few minutes and add the seasonings.
  4. Then add crumbled tofu and mix everything.
  5. Cook for 5-7 minutes and turn off the heat.
  6. Transfer to serving plate/bowl and enjoy

So within 15 minutes, you have the dish ready and you can enjoy it right away or keep it aside for later use.

Serving Suggestions

This is such a simple recipe and it’s extremely easy to pair it with different kinds of other dishes or meals. You can serve it as is or along with :

Plain Bread or Toast

Roti, Parantha (I love this combo) or Poori (traditional Indian sides).

You can add it as a filling in wraps or sandwiches.

Can be added as an ingredient in fried rice or can be served along with one.

Can be used as stuffing in buns/puffs 

Can be eaten as side dish too.

Ingredients

  • 14 oz Firm Tofu - check notes
  • 1 Medium Red Onion 
  • 7 Baby Tomatoes - check notes
  • 1 Medium Green Bell Pepper 
  • 1/2 Cup Frozen Green Peas - you can use fresh peas too
  • 1/2 Cup Frozen Sweet Corn - you can use fresh-boiled corn
  • 2 Tbsp Olive Oil - for making the recipe. use any light oil.

Seasoning:

  • 1 Tsp turmeric powder
  • 1 Tsp red chili powder
  • 1 Tsp salt - use as per taste
  • 1 Tsp curry powder
  • 2 tsp coriander powder - optional

Garnish - Optional:

  • 5-6 stalks fresh coriander/cilantro
  • 1 small lemon - for lemon juice.

Instructions

  3. Now add frozen sweet corn, peas, and chopped bell peppers and saute.
  4. Cook for a minute and add the seasonings.
  5. Then add chopped tomatoes and saute.
  6. Add crumbled tofu and mix everything.
  7. Cook for 5-7 minutes and turn off the heat.
  8. Transfer to serving plate/bowl, garnish with chopped coriander and lemon juice
  9. Enjoy

Notes

Tofu: I'm using firm tofu but you can use soft tofu too.

Frozen Peas/Corn: you can use fresh too. If using fresh corn, please boil and crush before use.

    This is so good. Tofu really does mimic scrambled eggs well and the curry flavor jazzed up the morning with something different.
