‘Tofu’ was something I tried for the first time when I came to USA and I loved the taste and texture of it as it was very similar to our Desi Paneer (Indian cottage cheese).
I loved that it’s extremely easy to use in various styles/recipes, easily available, and is packed with protein. Especially as a vegetarian or vegan, it’s an awesome source of protein.
This is one of my GOTO recipes using tofu as it’s SUPER EASY … takes literally under 15 minutes to cook and it can be used in soooooo many ways.
If you haven’t yet tried it, you should definitely make my delicious version which is a mix of tofu with fresh vegetables, and then add the magic of ‘curry powder’ along with turmeric, chili powder, and salt to tantalize your tastebuds.
This delightful and nutritious dish is not only easy to prepare but also a perfect way to infuse your mornings with the rich and aromatic spices of Indian cuisine.
This recipe will be extremely helpful if you transitioning from egg eater to vegetarian/vegan. It gives you the same texture and kind of taste … so that you don’t miss the eggs in your diet.

Although I’ve mentioned the ‘cilantro + lemon juice’ as optional, but they do add a refreshing taste to our dish and balance the ingredients very well.

This is such a simple recipe and it’s extremely easy to pair it with different kinds of other dishes or meals. You can serve it as is or along with :
Plain Bread or Toast
Roti, Parantha (I love this combo) or Poori (traditional Indian sides).
You can add it as a filling in wraps or sandwiches.
Can be added as an ingredient in fried rice or can be served along with one.
Can be used as stuffing in buns/puffs
Can be eaten as side dish too.

Tofu: I'm using firm tofu but you can use soft tofu too.
Frozen Peas/Corn: you can use fresh too. If using fresh corn, please boil and crush before use.

This is so good. Tofu really does mimic scrambled eggs well and the curry flavor jazzed up the morning with something different.
