Easy Lamb Meatballs – Glutenfree Lamb Kofta Recipe

Lamb Meatballs – Lamb Kofta recipe using ground lamb meat, eggs, spices, and chickpea flour (besan). This recipe is gluten-free and can be frozen for up to 2 months.

Lamb Meatballs or Lamb Kofta Ingredients:

Lamb meatballs are one of my family’s favorite meatballs recipe that’s been going around for generations. This recipe is the Indian version of meatballs, also popularly known as ‘Lamb Kofta’ in India.

The meatballs are extremely easy to make, using very basic ingredients) and juicy in every bite. Also, this recipe is made gluten-free by using chickpea flour also known as ‘besan’ in India. 

Here’s what you need:

  • Ground Lamb Meat
  • Onions: I’m using red onions, but you can use white/yellow onions too or can use ground onion powder as a substitute.
  • Spices: coriander powder, cumin powder, turmeric powder, chili powder, garam masala, etc (all the details are given in the recipe below).
  • Chickpea Flour: also known as besan or gramflour
  • Egg
  • Lemon or Lime
  • Fresh Cilantro or Coriander

These are the basic ingredients for the meatballs and all these ingredients are easily available in local stores or any Indian store or online too.

Making the Lamb Meatballs or Lamb Kofta:

The recipe is easy and doesn’t require any special types of equipment:

We start by adding all the ingredients one by one in a large bowl (mix egg the last).

Then we mix everything together.

Then divide the mixture into equal size dough (about a cookie ball size or 1.5 Tbsp)

Then make round balls and keep in a large plate.

Cooking the Meatballs:

Now, I personally like cooking any kind of meatballs in a skillet for an even browning and smoked flavor. 

However, the meatballs can be cooked in an oven or air-fryer too (have tried a couple of times when I am in a hurry).

  1. I usually start by adding oil to a large skillet and let it heat for 2 minutes on medium-high flames.
  2. Then place 15-16 meatballs (or as many your skillet can accommodate without mushing them together).
  3. Then let them cook on medium heat and browning evenly on all sides.
  4. This takes about 10-12 minutes to completely cook the meatballs.

For Cooking Meatballs in Oven:

  1. Pre-heat the oven at 350F for 5 minutes.
  2. Place the meatballs lined in a sprayed baking tray.
  3. Once the meatballs are lined up on the baking tray, spray them again with oil.
  4. Bake for 15 minutes and then turn sides. Bake for another 10 minutes.
  5. Once evenly browned, remove from the oven.

For Cooking Meatballs in Air-Fryer:

  1. Preheat the air fryer at 350F.
  2. Add 5-6 meatballs or as many as your air fryer basket can easily accommodate.
  3. Air fry for 6 minutes, then pull the air fryer basket and turn the meatballs.
  4. Cook for another 5-6 minutes or until evenly brown.
  5. Follow this step to air fry all the meatballs.

Serving the Lamb Kofta:

Once the meatballs are made, this is the most fun part and usually, I like serving the meatballs with a light curry or sauce.

But during Christmas, I like to serve them with a simple cranberry sauce or some gravy.

You can also serve the meatballs as snacks along with dressings (ranch, blue cheese) or with chutneys like: mint chutney, cilantro chutney or even sweet-spicy tomato chutney.

Storing the Lamb Meatballs or Kofta:

These can be stored in an air-tight jar in the fridge for 3-4 days or you can freeze them after cooking for up to a month (in a freezer friendly bag).

To use frozen meatballs, simply thaw them overnight in the fridge and use them the next day.

Ingredients

  • 1 lb. Ground Lamb (keema)
  • 1 Large Red Onion - diced
  • 3 Tbsp Chickpea Flour (besan)
  • 1 Large Egg
  • 1 Lemon
  • 2 Tbsp Ghee (you can use light oil too)
  • 5 Stems Cilantro - diced
  • 5 Tbsp Oil - for cooking meatballs in skillet

Spices:

  • 1 Tsp Turmeric Powder
  • 1 Tsp Chili Powder
  • 1 Tbsp Coriander Powder
  • 1 Tbsp Cumin Powder
  • 1/2 Tsp Ginger Powder
  • 1/4 Tsp Garlic Powder (saltless)
  • 1 Tbsp Garam Masala (can use curry powder)
  • 1.5 Tsp Salt (use as per taste)

Instructions

Preparing the Lamb Meatballs:

  1. In a large bowl, add the ground lamb.
  2. Then add diced onions and cilantro.
  3. Now, add the spices, chickpea flour, and egg.
  4. Mix everything using hands (you can wear gloves).
  5. Once the dough is made, divide it into 15-16 equal balls.
  6. Wet your hands and roll each dough ball into a circular shape.
  7. Keep the meatballs in a plate.

Cooking the Lamb Meatballs:
Skillet Method:

  1. Add 2 tbsp oil in a skillet and let it heat for 2 minutes.
  2. Now add 15-16 meatballs (as much your skillet easily accommodate).
  3. Let this cook on medium heat and turn sides to brown evenly. Keep adding 1-2 tbsp oil in between.
  4. Cook till evenly brown on all sides.
  5. Turn off the heat and lamb meatballs are ready to use as per choice.
