What You Need for Summer Harvest Salad:

Different Veggies – Add the ones you like to eat raw.

Colorful Fruits – I’m using a combination of citrus with berries and apple.

Nuts – you can use almonds, hemp seeds, or any other that you like.

Bacon

Wish-Bone Dressing – I’m loving the Chunky Bleu Cheese flavor!)

Summer Harvest Salad: a delicious mix of summer veggies, fruits, nuts and bacon along with Wish-Bone® Chunky Blue Cheese Dressing. It's a perfect spring-summer meal or brunch recipe.

Ingredients

  • 4 Tbsp Wish-Bone® Chunky Blue Cheese Dressing
  • 1 Large Carrot - thinly sliced
  • 1 Large Zucchini - thinly sliced
  • 1/2 Cup Fresh Spinach
  • 1/2 Cup Fresh Lettuce
  • 1/2 Cup Fresh Peas
  • 6-7 Red Radish - thinly sliced
  • 1 Large Green Apple - thinly sliced
  • 1/4 Cup Fresh Blueberries
  • 1/4 Cup Grapes
  • 4 Slices Bacon - cooked and crumbled

Toppings: (optional)

  • 4 Tbsp Slivered Almonds
  • 1 Tbsp Roasted Quinoa

Instructions

  1. Take 2 plates or serving bowl.
  2. Add lettuce and spinach equally in both bowls.
  3. Add sliced veggies and fruits in each bowl.
  4. Add crumbled bacon and top with Wish-Bone® Chunky Blue Cheese Dressing.
  5. Top with roasted quinoa and slivered almonds.
  6. Serve fresh.
