Mother’s Day is just around the corner and I’m all set to pamper MoM with all her favorite things.
Like this Easy Mushroom Spinach Gnocchi and our favorite JaM Cellars Butter Chardonnay for a quick Mother-Daughter brunch.
My Mom is the inspiration behind ‘Easy Cooking with Molly’, she’s always been so supportive of me following my dreams and doing something that makes me immensely happy.So it’s imperative that she gets to taste the best of the dishes and made to feel like a queen.
So every Mother’s Day, we decide to spend a whole day doing things that she likes along with some spa time, shopping, etc.
But as the whole house is recovering from a bout of cold cough and seasonal allergies, I decided to keep things indoors.
But that doesn’t mean we are going to miss any of the fun that Mom and I have together.
So I’ve bought some of her favorite classic movies and chilled a bottle of Butter Chardonnay along with a platter of wine snacks she loves.
We have had Butter Chardonnay before and I must say that it’s bold, luscious, and yet creamy…almost vanilla-lemon aromas make it our favorite.
We love pairing it with meals or just a wine session with friends — “Everything’s Better with Butter!”
Apart from that, I’m making her a Mushroom Spinach Gnocchi that she absolutely loves!
She loves pasta and gnocchi is one of her favorites, so I decided to add some fresh, juicy mushrooms, and spinach and cook it in a light garlicky-buttery sauce.
That combines soooooooo well with our Butter Chardonnay

I’d have made the gnocchi from scratch but as we are all recovering from this seasonal thing, I decided to use organic storebought gnocchi which makes this recipe even simpler and quicker to make.
If you’ve never made gnocchi before, then this is a great recipe to start with.

15 minutes and you get a flavorful almost restaurant quality meal at home to surprise your mom this Mother’s Day along with Butter Chardonnay.
The Butter brims with stone fruit and baked lemon notes and has a lovely, long, vanilla finish. Simply put, it melts in your mouth!

Easy Mushroom Spinach Gnocchi – Restaurant Style #gnocchi
Easy Mushroom Spinach Gnocchi (Restaurant Style) absolutely delicious, buttery and filled with flavor.
Ingredients
- 1 lb. Uncooked Gnocchi
- 16 oz White Mushrooms (Button Mushrooms) - washed and sliced
- 1/4 Cup White Wine - Optional
- 2 cups Fresh Baby Spinach
- 2 Garlic Cloves - smashed
- 1 Medium White Onion - diced
- 1/2 Cups Cream of Choice - you can use half-half, light or heavy cream
- 1/4 Cup Parmesan Cheese
- 2 Tbsp Butter
- 2 Tbsp Olive Oil
Seasoning:
- 1/2 Tsp Italian Seasoning
- 1/2 Tsp Chili Flakes - optional
- 1/2 Tsp salt - use as per taste
- 1/4 Tsp pepper
Instructions
- Melt butter and olive oil in a skillet over medium heat.
- Sauté the sliced onions for 2 minutes.
- Add the mushrooms and saute until tender.
- (Optional) If using Wine, Add the wine and let it cook for about 1 minute.
- Stir in the grated garlic and add the heavy cream.
- Cook the gnocchi according to the package and strain out the water..
- Add the Parmesan cheese and spinach and stir for 1 minute until it is wilted.
- Lastly, stir in the cooked gnocchi and season with salt and pepper.

The instructions say add wine but the ingredients don’t list wine

Hello, Thanks for the message and you need 1/4 cup of white wine for this recipe, however, it can be made without wine too. The quantity was missing in the instructions and has been added, Thanks, Molly
