Summer holidays are in full swing and thereβs a lot of parties, camping, and travel going on.
Parents are relaxed from the hectic schedule and kids are definitely having a great time.
But in no time, itβs again going to be βBack-to-Schoolβ week for many and that means getting back to an everyday schedule, planning the day, especially meal planning.
Thatβs when these two recipes Thai Red Curry Wraps and Chicken Tikka Quesadilla come in so handy.
Now, Iβm a huge fan of βTortillaLand Tortillaβs (uncooked) and we usually get the 50 count bag from Costco (refrigerated section).
Itβs one of the most used ingredients in my kitchen and I need a big bag.
The good part about this packing is that it comes in 2 sub-packs (25 counts each), so you can use one pack (keep in the fridge) and freeze the other pack for later.
Just thaw the frozen tortilla overnight in the fridge and youβre good to go.
If youβve never tried this TortillaLand tortilla, then youβre in for a pleasant surprise as they cook in literally 60 seconds (Yes!!!!) and they are absolutely easy to make.
Just heat a pan, place one tortilla and turn it to the other side within 30 seconds or until it puffs up.
Check both sides to make sure the tortilla is fully cooked and thatβs it. No making the dough, rolling and going through the whole process of making them at home.
Now, letβs talk a little about of delicious Thai Red Curry Wraps which is Thai flavor-inspired wraps filled with veggies and chicken.
They are easy to prepare on your most busy days too as you can make 8-10 wraps in 20 minutes β thanks to these uncooked flour tortillas.
The only thing you need to prep is the chicken and veggie mix, once thatβs done then all you have to do is lightly cook the uncooked tortillas, fill them with the Thai mix, and wrap them tightly.
Thatβs it, they are ready to serve with your favorite sauce or dip and if you like them slightly crunchy, then all you have to do is heat them in a pan for one minute (rotating the wraps) and they crunch up real fast.

As I just mentioned above, this recipe is also extremely easy to make on a busy night and all you need to do is make a batch of chicken tikka (5 ingredients, seriously).
And then just add a small amount of chicken on each uncooked tortilla and heat them for 2 minutes. This recipe makes 8-10 quesadilla.
So go ahead and try this ‘Chicken Tikka Quesadilla’ recipe as who doesnβt love a cheesy homemade fresh quesadilla.

I am a fan of Tortilla Land they have really nice products and this Indian twist on a quesadilla using chicken tikka sounds perfect. Indian and Mexican food have a lot in common =)

Great post! We always have some sad, plain wraps lying around but just goes to show they are more versatile then I give them credit for! If I had to choose a favourite I’d definitely pick the quesadillas. I love them!
