Summer holidays are in full swing and there’s a lot of parties, camping, and travel going on.

Parents are relaxed from the hectic schedule and kids are definitely having a great time.

But in no time, it’s again going to be β€˜Back-to-School’ week for many and that means getting back to an everyday schedule, planning the day, especially meal planning.

That’s when these two recipes Thai Red Curry Wraps and Chicken Tikka Quesadilla come in so handy.

Now, I’m a huge fan of β€˜TortillaLand Tortilla’s (uncooked) and we usually get the 50 count bag from Costco (refrigerated section).

It’s one of the most used ingredients in my kitchen and I need a big bag.

The good part about this packing is that it comes in 2 sub-packs (25 counts each), so you can use one pack (keep in the fridge) and freeze the other pack for later.

Just thaw the frozen tortilla overnight in the fridge and you’re good to go.

If you’ve never tried this TortillaLand tortilla, then you’re in for a pleasant surprise as they cook in literally 60 seconds (Yes!!!!) and they are absolutely easy to make.

Just heat a pan, place one tortilla and turn it to the other side within 30 seconds or until it puffs up.

Check both sides to make sure the tortilla is fully cooked and that’s it. No making the dough, rolling and going through the whole process of making them at home.

Now, let’s talk a little about of delicious Thai Red Curry Wraps which is Thai flavor-inspired wraps filled with veggies and chicken.

They are easy to prepare on your most busy days too as you can make 8-10 wraps in 20 minutes – thanks to these uncooked flour tortillas.

The only thing you need to prep is the chicken and veggie mix, once that’s done then all you have to do is lightly cook the uncooked tortillas, fill them with the Thai mix, and wrap them tightly.

That’s it, they are ready to serve with your favorite sauce or dip and if you like them slightly crunchy, then all you have to do is heat them in a pan for one minute (rotating the wraps) and they crunch up real fast.

Thai Red Curry Wraps Ingredients: 

  • Cooked Shredded Chicken
  • Uncooked Tortilla
  • Cooked Rice – any kind or any other cooked grain
  • Green Bell Peppers – thinly chopped
  • Cucumber – thinly chopped
  • Carrot – thinly grated
  • Cabbage – thinly chopped
  • Frozen Green Peas – thawed
  • Red Thai Curry Paste
  • Sesame Oil – or any light oil
  • Cheese – as per taste

Yes, our favorite Indian curry combined with cheese and tortillas results in this yummy quesadilla that no one can say no to.

And the best part, this is so easy-peasy that you’d want to make it many times in a week ☺

As I just mentioned above, this recipe is also extremely easy to make on a busy night and all you need to do is make a batch of chicken tikka (5 ingredients, seriously).

And then just add a small amount of chicken on each uncooked tortilla and heat them for 2 minutes. This recipe makes 8-10 quesadilla.

Chicken Tikka Quesadilla Ingredients:

  • Cooked Shredded Chicken
  • Uncooked Tortilla
  • Tomatoes – chopped
  • Plain Yogurt – any brand
  • Cream
  • Indian Chicken Curry Masala
  • Olive Oil – or any light oil
  • Cheese – as per taste

Thai Red Curry Wraps and Chicken Tikka Quesadilla: 2 Back to School recipes that can be served as lunch or dinner.

Ingredients

Thai Red Curry Wraps:

  • 1/2 Cup Cooked Shredded Chicken
  • 8 Uncooked Tortilla
  • 1/2 Cup Cooked Rice - any kind or any other cooked grain
  • 1/4 cup Green Bell Peppers - thinly chopped
  • 1/4 cup Cucumber - thinly chopped
  • 1/4 cup Carrot - thinly grated
  • 1/4 cup Cabbage - thinly chopped
  • 1/8 Cup Frozen Green Peas - thawed
  • 1 Tbsp Red Thai Curry Paste
  • 2 Tsp Sesame Oil - or any light oil
  • Cheese - as per taste

Chicken Tikka Quesadilla:

  • 1/2 Cup Cooked Shredded Chicken
  • 8 Uncooked Tortilla
  • 1/4 Cup Tomatoes - chopped
  • 1/2 Cup Plain Yogurt - any brand
  • 1/4 Cup Cream
  • 2 Tbsp Indian Chicken Curry Masala
  • 2 Tsp Olive Oil - or any light oil
  • Cheese - as per taste

Instructions

Thai Red Curry Wraps:

Make the Red Curry Mixture:

  1. Heat oil in a pan.
  2. Add chopped green bell peppers, peas and saute for a 2 minutes over medium heat.
  3. Add chicken, rice, red curry paste, salt and cook for 2-3 minutes on low heat.
  4. Once everything is cooked, turn off the heat and let the mixture cool completely.
  5. Once, the mixture is completely cool, add cabbage, carrot, and cucumber.
  6. Mix everything evenly and keep aside.

Cook Tortilla:

  1. Heat a large non-stick pan and add 1 uncooked tortilla.
  2. Cook the tortilla on both sides as per the package.
  3. Similarly, cook all the tortillas and keep aside.

Make the Wraps:

  1. Now, take 1 cooked tortilla and place (2 tbsp red curry mixture and sprinkle 1/2 tsp cheese) towards one end of the tortilla.
  2. Roll the tortilla to form a roll shape and keep it aside.
  3. Follow this step to roll all the red curry wraps.
  4. You can serve it like this or heat it for 5-6 seconds on each side to make it crisp and then serve.

Chicken Tikka Quesadilla:

  1. Heat oil in a pan.
  2. Add tomatoes and cook for 2 minutes over low heat.
  3. Now, add yogurt and cream and let this cook over low heat for 3 minutes.
  4. Finally, add the Indian curry masala and cook for another minute.
  5. Turn off the heat and cool completely.

Cook Tortilla:

  1. Heat a large non-stick pan and add 1 uncooked tortilla.
  2. Cook the tortilla on both sides as per package.
  3. Similarly, cook all the tortillas and keep them aside.

Make Quesadilla:

  1. Take 1 cooked tortilla and place 2 tbsp cooked chicken mix over it.
  2. Spread the chicken mix evenly all over the tortilla.
  3. Add 2 Tsp cheese all over the tortilla.
  4. Place another cooked tortilla over this and press down with your hands.
  5. Similarly, fill all the quesadilla.
  6. Heat a pan and place the filled quesadilla.
  7. Lightly press the quesadilla to melt the cheese on both sides.
  8. Remove from pan after cheese is lightly melted and both sides of tortilla stick to each other (takes about 30 seconds)
  9. Similarly, cook all the other quesadillas.
  10. Slice the quesadilla and serve immediately.

    I am a fan of Tortilla Land they have really nice products and this Indian twist on a quesadilla using chicken tikka sounds perfect. Indian and Mexican food have a lot in common =)
