This sandwich was created in a complete desperate attempt to make something for a quick lunch (within 5-6 min) and I was highly amazed to see the outcome. It turned out to be one of the tastiest n easiest vegetarian sandwich I ever ate. The combination of sweet min chutney and avocado is unbeatable hence resulting in a sandwich which was half finished even before it could be clicked :)) ENJOY !!!!
Serving Suggestion:Serve Cold with OR without Drinks
1 Small Bowl – To mix Chutney
Electric Grinder / Hand Blender with cup attachment
1 Large Non-Stick Pan – For Toasting Bread Slices
2 Large Avocado – Peeled and Cut into long thick strips
1 Large Tomato – Cut into thin circles
Salt – As per taste
Black Pepper – As per taste
4 Slices of Brown Bread – (You can use bread of your choice)
1 Tsp of Oil – Use any flavorless oil
For Mint Chutney
4 Tbsp Fresh Mint Leaves – Washed
½ Tsp Cumin Powder – Optional
¼ Tsp Honey – (You can use any sweetener or sugar as preferred)
2 Tsp Water
Put all the “Mint Chutney” ingredients in an electric grinder and blend till a smooth paste is formed.
Take the chutney out in a small bowl and mix salt & pepper
Put the large non-stick pan on medium heat, dab oil on the pan, toast 4 slices on it (browning both sides lightly)
Take a toasted slice, spread a Tsp of mint chutney, put 5 slices of avocado & 3 slices of tomatoes.
Now put a plain toasted slice on the above prepared slice and follow the same on other two slices.
