Thai Red Curry Wraps and Chicken Tikka Quesadilla (2 BTS Recipes)

Thai Red Curry Wraps and Chicken Tikka Quesadilla: Two of my favorite back to school recipes using TortillaLandⓇ flour tortillas. Both the recipes are absolutely delicious, filled with flavor and ready in 20 minutes (each).

Parents are relaxed from the hectic schedule and kids are definitely having a great time. But in no-time, it’s again going to be ‘Back-to-School’ week for many and that means getting back to an everyday schedule, planning the day, especially meal planning. That’s when these two recipes ‘Thai Red Curry Wraps and Chicken Tikka Quesadilla’ come in so handy. Now, I’m a huge fan of ‘TortillaLand Tortilla’s (uncooked) and we usually get the 50 count bag from Costco (refrigerated section). It’s one of the most used ingredients in my kitchen and I definitely need a big bag. The good part about this packing is that it comes in 2 sub packs (25 counts each), so you can use one pack (keep in fridge) and freeze the other pack for later. Just thaw the frozen tortilla overnight in the fridge and you’re good to go. If you’ve never tried this TortillaLand tortilla, then you’re in for a pleasant surprise as they cook in literally 60 seconds (Yes!!!!) and they are absolutely easy to make. Just heat a pan, place one tortilla and turn it to the other side within 30 seconds or until it puffs up. Check both sides to make sure the tortilla is fully cooked and that’s it. No making the dough, rolling and going through the whole process of making them at home. curry-thai-roll-recipeNow, let’s talk a little about of delicious ‘Thai Red Curry Wraps’  which is this Thai flavor inspired wraps filled with veggies and chicken. They are easy to prepare on your most busy days too as you can literally make 8-10 wraps in 20 minutes – thanks to these uncooked flour tortilla. The only thing you need to prep is the chicken and veggie mix, once that’s done then all you have to do is lightly cook the uncooked tortilla, fill them with the Thai mix and wrap them tightly. That’s it, they are ready to serve with your favorite sauce or dip and if you like them slightly crunchy, then all you have to do is heat them in a pan for one minute (rotating the wraps) and they crunch up real fast.

In fact, this recipe is also a great way of hiding those vegetables and trust me the kids love it as they’re definitely tasting all the flavors without knowing they’re eating veggies too ☺ So, go ahead and try this super easy and delicious recipe for your ‘back to school’ routine.

Now, since it’s back-to-school and we need all the extra help we can, here’s another quick recipe of a ‘Chicken Tikka Quesadilla’. Yes, our favorite Indian curry combined with cheese and tortillas results in this absolutely yummy quesadilla that no-one can say no to. And the best part, this is so easy-peasy that you’d literally want to make it many times in a week ☺chicken-quesadilla-recipe As I just mentioned above, this recipe is also extremely easy to make on a busy night and all you need to do is make a batch of chicken tikka (5 ingredients, seriously) and then just add a small amount of chicken on each uncooked tortilla and heat them for 2 minutes. Now, both ‘Thai Red Curry Wraps and Chicken Tikka Quesadilla’ recipes were made in literally half the time it usually takes to make the ones where you’d have used homemade tortillas (as that definitely means more time and effort). So this bag of 50 flour tortillas definitely gets used very fast. If you’ve not yet tried uncooked TortillaLand tortillas, then I highly recommend you try them soon at your local Costco. Ingredients

Thai Red Curry Wraps:

1/2 Cup Cooked Shredded Chicken

8 Uncooked Tortilla

1/2 Cup Cooked Rice - any kind or any other cooked grain

1/4 cup Green Bell Peppers - thinly chopped

1/4 cup Cucumber - thinly chopped

1/4 cup Carrot - thinly grated

1/4 cup Cabbage - thinly chopped

1/8 Cup Frozen Green Peas - thawed

1 Tbsp Red Thai Curry Paste

2 Tsp Sesame Oil - or any light oil

Cheese - as per taste

Chicken Tikka Quesadilla:

1/2 Cup Cooked Shredded Chicken

8 Uncooked Tortilla

1/4 Cup Tomatoes - chopped

1/2 Cup Plain Yogurt - any brand

1/4 Cup Cream

2 Tbsp Indian Chicken Curry Masala

2 Tsp Olive Oil - or any light oil

Cheese - as per taste

Instructions

    Thai Red Curry Wraps:
    Make the Red Curry Mixture:
  1. Heat oil in a pan.
  2. Add chopped green bell peppers, peas and saute for a 2 minutes over medium heat.
  3. Add chicken, rice, red curry paste, salt and cook for 2-3 minutes on low heat.
  4. Once everything is cooked, turn off the heat and let the mixture cool completely.
  5. Once, the mixture is completely cool, add cabbage, carrot and cucumber.
  6. Mix everything evenly and keep aside.
  7. Cook Tortilla:
  8. Heat a large non-stick pan and add 1 uncooked tortilla.
  9. Cook the tortilla on both side as per package.
  10. Similarly cook all the tortilla and keep aside.
  11. Make the Wraps:
  12. Now, take 1 cooked tortilla and place (2tbsp red curry mixture and sprinkle 1/2 tsp cheese) towards one end of the tortilla.
  13. Roll the tortilla to form a roll shape and keep aside.
  14. Follow this step to roll all the red curry wraps.
  15. You can serve like this or heat it for 5-6 seconds on each side to make it crisp and then serve.

  17. Chicken Tikka Quesadilla:
  18. Heat oil in a pan.
  19. Add tomatoes and cook for 2 minutes over low heat.
  20. Now, add yogurt+cream and let this cook over low heat for 3 minutes.
  21. Finally, add the Indian curry masala and cook for another minute.
  22. Turn off the heat and cool completely.
  23. Cook Tortilla:
  24. Heat a large non-stick pan and add 1 uncooked tortilla.
  25. Cook the tortilla on both side as per package.
  26. Similarly cook all the tortilla and keep aside.
  27. Make Quesadilla:
  28. Take 1 cooked tortilla and place 2 tbsp cooked chicken mix over it.
  29. Spread the chicken mix evenly all over the tortilla.
  30. Add 2 Tsp cheese all over the tortilla.
  31. Place another cooked tortilla over this and press down with hands.
  32. Similarly, fill all the quesadilla.
  33. Heat a pan and place the filled quesadilla.
  34. Lightly press the quesadilla to melt the cheese on both sides.
  35. Remove from pan after cheese is lightly melted and both sides of tortilla stick to each other (takes about 30 seconds)
  36. Similarly, cook all the other quesadilla.
  37. Slice the quesadilla and serve immediately.

    Great post! We always have some sad, plain wraps lying around but just goes to show they are more versatile then I give them credit for! If I had to choose a favourite I'd definitely pick the quesadillas. I love them!

    I am a fan of Tortilla Land they have really nice products and this Indian twist on a quesadilla using chicken tikka sounds perfect. Indian and Mexican food have a lot in common =)
