Indian Mashed Potatoes – Aloo Bharta (Mustard, Onion & Garlic): creamy and extremely flavorful Indian style mashed potato (aloo bharta) using onion, garlic, mustard sauce along with spices. You only need to cook potatoes and the rest ingredients are just chopped and mixed.

Indian Mashed Potatoes Ingredients:

  • Boiled Potatoes, peeledyou can take large, medium, or small potatoes. I prefer russet potatoes for the mash recipe as they are the creamiest but any potatoes would do.
  • Milk
  • Butter – you can take unsalted or lightly salted butter like amul butter and adjust salt accordingly.
  • Red OnionI’m using red onions as they give the best taste but you can also use white or yellow onion or even shallots.
  • Mustard Sauce – I’m using Indian mustard sauce for its strong flavors, you can use ‘brown or spicy mustard sauce’ too.
  • Turmeric Powder
  • Red Chili Powder – add as per taste
  • Garlic Powder – use as per taste
  • Black Pepper Powder 
  • Red Chili Flakes 
  • Salt – to taste
  • Fresh Cilantro – will be used in the mix and for garnish too

Making the Aloo Bharta or Mustard Indian Mashed Potato:

This is a quick, simple, and delicious recipe and the ONLY thing that needs to be cooked in it are the Potatoes!

Trust me the taste of freshly chopped onion, and cilantro along with powdered spices is going to enhance the flavors exponentially.

We start by boiling the potatoes by any method you please example ‘pressure cooker’, ‘instant pot’ or simply boiled in a pot.

Then we cool the potatoes till warm to the touch … 1 EXTREMELY Important Tip for creamy – evenly mashed potatoes is to work with warm boiled potato as it helps in even texture. Use a potato masher or shredder to mash them.

Then add melted butter (leaving 2-3 tsp of butter intact for garnish) and milk to the mashed potato and mix evenly using a whisk. This helps in creating airy/light and even mash.

Then we thinly chop the onion and fresh cilantro (you can add freshly chopped chilies too if you like them).

Then in a large bowl, add the mashed potatoes, chopped onion, cilantro, and all the spices along with mustard sauce.

For this recipe, I’m using garlic powder but you can even use cooked and mashed garlic. Just don’t add freshly chopped garlic as it will over-power the flavors/taste and sometimes even gives a sour taste.

Mix using a spatula or large spoon. Check for salt and other flavors and adjust as per taste.

Transfer to a serving bowl/platter and drizzle a spoon of melted butter along with freshly chopped cilantro, red chili flakes, and black pepper powder on it.

Add a tsp of butter on top and serve.

Ingredients

  • 8 Medium Boiled Potatoes, peeled - check notes
  • 1/2 Cup Milk
  • 1/4 Cup Butter - check notes
  • 1 Large Red Onion
  • 4-5 tbsp Mustard Sauce - check notes
  • 1/2 Bunch Fresh Cilantro - will be used in the mix and for garnish too

Spices:

  • 1.5 Tsp Turmeric Powder
  • 1 Tsp Red Chili Powder - add as per taste
  • 1 Tsp Garlic Powder - use as per taste
  • 1/4 Tsp Black Pepper Powder 
  • 2 Tsp Red Chili Flakes 
  • 1 TspSalt - to taste

Instructions

Boil The Potatoes:

  • Then in a large bowl, add the mashed potatoes, chopped onion, cilantro, and all the spices along with mustard sauce.

    The recipe was easy to follow, and the end result was delicious. The mashed potatoes were perfectly spiced and had a unique flavor that I had never tasted before. I also added a small splash of mustard oil for some more kick plus a little cumin seeds that gave the dish a smoky flavor that was simply amazing.
