This Gorgeous Gorgeous Beet Blueberry Ginger Smoothie Bowl (Valentines Breakfast) is definitely on our Valentines Breakfast menu along with few other yums.

And if you feel the color is too pink for you, don’t be scared, I’ll talk about tons of ways to bring it to your liking – I promise.

Valentines Breakfast’ is a huge thing at our place as every other day we hardly get time to sit or even talk to each other in the morning.

Do come valentines n we actually look forward to sitting together for a scrumptious breakfast filled with stuff that he and I like …. cause trust me, our tastes are the polar opposite!

He likes spicy, I like sweet….he loves fried food n I can pass it on, he loves potatoes n I’m not such a big fan…maybe I’ll be one in few years (unless it’s French fries)….

So you got the idea, Right?

So, Valentines, we meet in the middle just like this smoothie it has beets for the pink color (that I love) n blueberries for him.

I also grated some dark chocolate that he loves n Pistachio that I love …. so it’s a happy place for us (maybe I’ll tone the pink down a little for him).

Ingredients for the Beet Blueberry Ginger Smoothie Bowl

Beets are a unique source of phytonutrients called betalains which provide antioxidant, anti-inflammatory, and detoxification support.

But betalains undergo very steady loss as the cooking time is increased. Hence I decided to eat it raw or cooked for less than 15-20mins.

Blueberry is filled with antioxidants which are essential to optimizing health by helping to combat the free radicals that can damage cellular structures as well as DNA.

So great for our heart and cognitive behavior.

Ginger anti-inflammatory, helps in detox and bone health.

It’s a day to love and cherish each other, so why not start it the healthiest way we can.Stay tuned for more recipes to follow.

I love beets and the earthy flavor they lend to a smoothie, so I would definitely eat this bowl of yummy. My honeybunch…would sneer at it…but since he loves me, I’ll forgive him and eat his share, hahaha.

I love how it’s pink! So creative to use beets, I think beets are underrated. What a great healthy alternative, I don’t think I would even know how to begin to put it in a smoothy. I just may give it a try
    Thanks for sharing!

Sure, Thanks for liking the smoothie recipe.

  • Michelle Catallo January 11, 2017 (3:23 am)

How deliciously lovely! I grew up eating beets in a lot of things but, did not have the joy of beet soup (beet liquefied into anything really_) until I made it as an adult. Great concoction you made; everything compliments each other nicely and the ginger gives it a tiny bit of heat.

    • Molly Kumar January 12, 2017 (7:40 am)

Thanks Michelle. I didn’t eat much of beets growing up but since last 5-6 years, I’ve developed a taste for everything beets and it looks gorgeous too 🙂

  • Kasey January 11, 2017 (1:26 am)

This look gorgeous and sounds so good! I need to try it! You totally had me at dark chocolate 🙂

    • Molly Kumar January 12, 2017 (7:46 am)

Thanks Kasey, I hope you try it soon.

That bowl is beautiful. I really don’t know if I could get past the beet. I’m not a beet fan at all, but maybe it would be okay in this.

  • KC @ G-Free Foodie January 10, 2017 (7:31 pm)

I don’t think I’ve ever made a recipe with beets, but this looks pretty tasty. Maybe I should add to my breakfast shakes!
