Vegetable Tofu Soup

Vegetable Tofu Soup: 




Serving Suggestion: This soup is very chunky hence if serving as an appetizer, serve small quantity OR Serve it as a main course with bread

1 Large non-stick wok
Any Large Pot Lid




2 Cups Extra Firm Tofu, chopped into medium bite-size pieces

5 Medium Carrots, peeled & finely chopped

2 Medium Onion, finely Chopped

3 Sticks of Celery, finely Chopped – (Wash celery carefully as it contains lot of mud)

2 Tbsp Oil – (U can use any flavorless oil)

1.5  Cup Stock –  (You can use any between Chicken OR Vegetable) IF stock is not available add water

2 Tbsp Tomato Paste – Store Bought OR Homemade

2 Tbsp Regular Tomato Ketchup – Any brand

1 Tsp Crushed Red Chili Paste – Any brand – Optional & as per taste

1.5  Tsp of Tabasco Sauce – Optional & as per taste

1.5  Tsp Honey OR any sweetener of your choice

Salt – As per taste

  1. Heat oil in a non-stick wok on high, add onion, carrots, celery, and sauté for 4-5 min on medium heat.
  2. Add tomato paste, ketchup, chili paste, tabasco sauce, and honey, mix well, and sauté for 2min.
  3. Now add tofu and stir everything nicely & add stock OR water and cook for 4-5 min.
  4. After 4-5 minutes, give it a good stir and switch off the heat.
  5. Serve Hot
