Here are the ingredient details before we dive into the preparations. Most of these ingredients can be found easily at home or available in stores:
For the Filling:
Soft dates (pitted and finely chopped)
Almonds (chopped)
Cashews (chopped)

Step by Step Gujiya Rolls Recipe with Pictures
Step 1: Prepare the Mixes:
- Place all the dry fruits in a blender, except the soft dates.
- Now pulse to form a coarse mixture and keep aside.
- In the same blender, add the pitted dates along with some water and pulse to form a thick paste. Keep aside

Step 2: Prepare the Mawa & Filling:
- Heat a pan and add the crumbled mawa
- Saute it for 3-4 minutes over medium-low flames to roast it slightly yet keep the moisture.
- Once the khoya/khoa/mawa is slightly brown, just turn off the heat.
- Now, add the already prepared mix of dry fruit and date pulp.
- Mix everything and cool the filling completely.
Step 3: Assemble the Gujiya Rolls
- The spring roll packet contains 25 large square wrappers, please cut them as half. That makes it 50 wrappers for the rolls.
- Add atta + water in a bowl and make a thick slurry to help seal the rolls.
- Now, take the half-cut spring roll wrapper and place it on a clean surface.
- Take the slurry in a pastry/silicone brush or with a spoon, and apply the slurry on all sides of the sheet (pic 2 – below).
- Spoon 1-2 tablespoons of the filling onto one end of the wrapper (pic 2 – below).
- Fold a part of wrapper over the filling (tightly – pic 4 – below).
- Now, fold the other three edges as shown in pic 5 below and apply the slurry on all sides (this helps them seal tightly).
- Now, roll them tightly till it reaches the end. Press the final roll and keep it on a clean plate (place the roll sealed side down, to help it seal better).
- Repeat for all wrappers and place them on a clean plate.

Step 4: Cook the Gujiya Rolls
Now, to cook, we can use both frying or baking / air frying option and here are the details:
Steps to Fry the Rolls:
- Heat 1 cup light / neutral oil in a wok/kadhai/deep pot.
- Place 4-5 gujiya rolls and fry them on medium-low heat for 2-3 minutes (keep an eye as they cook really fast).
- Once the shell is golden brown and cooked, place them on a parchment paper or napkin to absorb any excess oil.
Steps to Bake or Air Fry the Gujiya Rolls:
•Preheat the oven/air fryer to 180°C (350°F).
•Brush the rolls with ghee or oil and bake for 10-12 minutes until golden and crispy (turn them on the other side after 5-6 minutes for an even golden crust and cooking).
Step 5: Serve & Enjoy
- Let the gujiya rolls cool slightly before serving.
- Transfer to a serving bowl/platter.

Wrapper: you can use homemade wrappers too.
