Moist Fig Honey Yogurt Cake with Olive Oil – is a soft, delicious and creamy cake filled with fresh figs, honey, and topped with whipped cream – pistachio. The cake can be used at an in-house party or just when you want to eat a light – healthy cake.

You have to try this Moist Fig-Honey Yogurt Cake with Pistachio Cream as it’s so gorgeous, light and fluffy that you would absolutely fall in love with its flavors.

Winter is the perfect season to enjoy so many fresh local produce and one of my favorites is figs – I love them in my salad, smoothies, savory dishes but I absolutely adore them in cakes.

And, my favorite flavor combination with figs is honey…they are absolutely made for each other.

Ingredients for Moist Yogurt Fig Honey Cake:

  • Fresh Figs – you may use dry figs too
  • Honey
  • Yogurt
  • Eggs
  • Olive Oil
  • Flour
  • Cream 
  • Pistachio or any other nuts you like.

I recently came across ‘Don Victor® Honey at Walmart in the Hispanic Aisle and it has such a sweet aromatic flavor.

Also, Don Victor® Honey is raw, filtered honey, not heated or processed in any other way hence I bought a couple of jars to use and to give as holiday gifts too.

By the time we got home, I had already decided to make the Honeycomb Fig Cake with Pistachio Cream with it.

The honey that I bought also has a honeycomb which I absolutely love to eat either on it’s own or cheese or on a warm dinner roll with freshly cut figs along with my morning coffee – it makes for a quick but yum breakfast.

Process to make the Moist Cake:

I’m using the honeycomb in the cake batter and also topping it on the cake along with some chopped pistachio for that fresh taste. (Here are some pictures of the cake process)

I served the cake for a holiday evening tea at my place and it was already gone before I could get to it.

Everybody absolutely loved the simple yet delicious flavors.

Moist Fig Honey Cake recipe using yogurt, olive oil

Moist Fig Honey Yogurt Cake with Olive Oil - is a soft, delicious and creamy cake filled with fresh figs, honey, and topped with whipped cream - pistachio. The cake can be used at an in-house party or just when you want to eat a light - healthy cake.  

Prep Time 10 minutes
Cook Time 30 minutes
Total Time 40 minutes

Ingredients

  • 4 Large Figs - crushed or pulp
  • 2 Tbsp Honey
  • 1 Tbsp Honeycombs - crushed, optional
  • 1 1/2 Cups All-Purpose Flour
  • 1/4 Cup Plain Yogurt
  • 1/2 Cup Olive Oil
  • 1 Cup Sugar - You may use sugar substitute of choice
  • 2 Large Eggs
  • 2 Tsp Baking Powder
  • 1/2 Tsp Salt

For Decoration

  • 1 Cup Whipped Cream
  • 1/4 Cup Pistachio - thinly sliced
  • 1 Tsp Honeycomb - chopped
  • 1 Fig - Sliced

Instructions

  1. Preheat the oven to 350F (175C).
  2. Spray a round cake pan with baking spray, set aside*
  3. Sift together flour, baking powder, salt in a large bowl.
  4. Whisk together, yogurt, sugar, honey and eggs, to form a batter.
  5. Fold the dry ingredients slowly into wet ingredients and form a smooth (lump-free batter).
  6. Add the honeycombs and fold again.
  7. Pour the batter into prepared pan.
  8. Bake for 30-35 minutes, until the cake feels springy to the touch and a toothpick or cake tester inserted into the center comes out clean. (Be careful not to over bake)
  9. Cool cake on a wire rack for 10 minutes; then turn it out of the pan onto the rack.
  10. Spread the whipped cream evenly over the cake.
  11. Place the sliced figs and honeycombs at the center of the cake.
  12. Sprinkle with sliced pistachio.
  13. Serve Fresh or store in the fridge for 2 days.
