I think I’m in love with Kale 😉 … .It’s one vegetable that I can’t get enough, it tastes great raw or cooked and with so many benefits…I can say it’s one real healthy affair.

I’m sure many of you would have tried kale in smoothie, salads, toast, eggs but these parathas top our Top 5 Kale Recipes and hence I thought you’ll try it too 🙂 (It’s really yum) !!!

Kale Oats Paratha – Kale Indian Flatbread Ingredient

  • Kale – fresh or frozen
  • Quick Oats – you can even use oats flour or just pulse whatever kind of plain oats you have.
  • Whole Wheat Flour (Atta) – you can use all-purpose flour (maida) too.
  • Flaxseed (Alsi)
  • Turmeric Powder (Haldi Powder)
  • Salt
  • Oil – any light oil would do

This Meatless Monday I’m sharing an easy recipe combining ‘Kale and Oats’ with some added ingredients to take Indian flatbread to a super healthy level.

If you are new to flatbread/paratha, they are traditional Indian flatbread that is usually triangular in shape, cooked over a pan with little oil.

They can be made plain/sweet/savory as per choice.

For this particular recipe, I’m using turmeric and flaxseed as I love the flavor of both in this combination however you can omit this step as per choice (it won’t effect the ratio of any other ingredients).

I’m adding a little bit of whole wheat flour to the dough to give it a lighter soft or I can say melt in your mouth texture.

They can be eaten plain or you can serve them with a hot Red Chili Pickle (Lal Mirch ka Achaar)or even Indian Sweet Mango Chutney Recipe (Chunda)

These Kale Oats Paratha – Kale Indian Flatbread can even be stored for upto 2 days in the fridge.

And I feel it’s a great way of using any extra raw kale that you are not able to consume right away and fear might go wasted.

Step by Step Process to Make the Kale Indian Flatbread

Make the Dough:

  1. In a food processor, add oats and pulse to form fine powder/flour consistency (Can take upto 1-2 minutes depending on the food processor)
  2. Now, add kale, ginger, flaxseed, turmeric powder, salt and oil in the processor.
  3. Pulse 3-4 times to mix everything (it will be a green crumbly mix right now).
  4. Add water and mix everything to form a smooth dough.
  5. Turn off the processor and scoop the dough on a flat surface.
  6. Knead the dough for a minute to remove any cracks or uneven texture

Process of making the Kale Oats Paratha – Kale Indian Flatbread

Make the Kale Oats Flatbread:

  1. Divide the dough into 12-14 equal circular balls.
  2. Place a nonstick pan over medium heat to make flatbread.
  3. Sprinkle some flour on a flat surface and roll the dough using a rolling pin make desired shape of flatbread (Could be round/square/triangle/anything)
  4. Now place the rolled flatbread on a hot nonstick pan and let cook for a minute.
  5. Turn the side and apply 1/4 tsp oil on the surface facing upwards.
  6. Turn the oily side down and cook.
  7. Apply 1/4 tsp oil on the side facing up and turn.
  8. Cook both sides evenly.
  9. Follow the above procedure till all flatbreads are made.
  10. Serve hot with choice of veggie or any side.

If Kale is not available, you can use spinach as a replacement.

Serving Suggestion:

You can serve these parathas as is or along with chutneys or pickles.

You can also serve it with Spicy Indian Potatoes with Cilantro – Dhaniya Wale Aloo or  Jeera Aloo Recipe (How to make Jeera Aloo) Indian Cumin Potatoes

You can also serve it with yogurt dip/raita or a light salad like Cucumber Avocado Salad (10 Minutes Easy Recipe)

Ingredients

  • 2 Cups Plain Quick Oats
  • 1/2 Cup Whole Wheat Flour
  • 1/2 Cup Fresh Kale - washed
  • 1 Tsp Shredded Ginger
  • 2 Tbsp Flax Seeds Powder
  • 1/4 Tsp Turmeric Powder
  • 1 Tsp Salt
  • 1/4 Wheat Flour - for making flatbread

Wet Ingredients for making Dough:

  • 2 Tbsp Olive Oil
  • 1/2 Cup Water
