So this summer, after devouring the first few mangoes as is, I decided to make a healthy ” Mango Coconut Kale Smoothie “.

Mango is the king of summer fruits and is available in abundance these days.

It’s rich color and the luscious sweet taste is a perfect company for any meal of the day.

Growing up in India and in summer’s this was the fruit that everyone anxiously waited for.

Different shapes, color, and varieties were flooded in Indian markets as many states had their own particular offerings.

And within a short span of 2-3 months, the season of mango gets completely over and you’re left with a frozen or canned variety of it.

I love kale and I’m always looking to incorporate more of it in my diet and this is a great combination especially for many of you who don’t like the slightly bitter taste of kale.

The sweetness of mango along with coconut water blends beautifully with kale.

And since we had some red cherries around, we added that too along with few more ingredients to make it a power packed combination.

The Mango Coconut Kale Smoothie recipe is simple but the taste is divine.

It’s a smooth taste and if you pulse it for little longer, there is no fiber to sieve. Store it in the refrigerator for one or two days.

Total Time 5 minutes

Ingredients

  • 1 Cup Ripe Mango - Peeled and sliced
  • 1/2 Cup Kale - You can use fresh or frozen
  • 1 Cup Coconut Water - Fresh or Frozen or Canned (As per your choice)
  • 1/2 Cup Red Cherries - Pitted fresh cherries - Optional
  • 1 Tsp Fresh Grated Ginger - Optional
  • 1/2 Cup Ice Cubes - Optional
  • 1/4 Tsp Cinnamon Powder

Decoration (Optional)1 Tbsp Chia Seeds - Any variety

  • 1 Tbsp Unsweetened Coconut Flakes

Instructions

Put all the ingredients in a jar and blend using a hand blender for 2 minutes to form a smoothie. (You can use Vitamix or Juicer too).

Pour in serving glasses and sprinkle some chia seeds and coconut flakes for decoration.

Serve Fresh
