What is Idli Dhokla?

Idli Dhokla is Instant Dhokla, an extremely popular Indian snack made in idli maker using besan (chickpea flour), dahi (yogurt), sooji (semolina), and few other ingredients.

(To make Glutenfree Dhokla, you can replace Sooji with 1/2 tsp baking powder + 1/2 tsp baking soda).

It’s steamed and hence has alight and airy texture. Because it’s steamed it makes for a perfect light snack or even in diet.

It’s a combination of sweet, spicy and savory flavors and is perfect for tea time snacks, parties, weddings or even festivals.

It comes as a surprise to many that ‘Dhokla’ is as popular as ‘Samosa and is available in every Indian street shops/restaurants or events.

Whenever we think of “Instant Snack” something extremely oily/sugary/salty/fried comes to our mind.

But here’s an instant snack which is healthy, light, quick and equally tasty. It can also be made a day before and served later

Tools to Use:

Idlee Maker – can use microwave idli maker or regular gas idli maker
1 Large Bowl – To mix ingredients
1 Small Pan – For tempering
1 Serving plate/dish
 

Idli Dhokla Ingredients:

  • 1.5 Cups Besan (chickpea flour)
  • 1/2 Cup Fine Sooji (semolina) (remove when making gluten-free version)
  • 3/4 Cup Plain Dahi (yogurt)
  • 3/4 Cup Water
  • 1 Tsp Haldi (turmeric)
  • 1 Tsp Salt
  • 1 Tbsp Sugar *
  • 2 Pinch Hing (Asafetida)
  • 1.5 Tsp Eno (MUST) – Available at any Indian grocery store

Idli Dhokla - Instant Dhokla Ingredients

Dhokla Tadka / Tempering Ingredients:

  • 2 Tbsp Vegetable Oil
  • 1-2 Curry Leaves Sprig
  • 1/2 Cup Fresh Cilantro – chopped
  • 2-3 Big Green Chilies
  • 1 Tbsp Sesame Seeds
  • 1 Tbsp Coconut Powder
  • ½ Tbsp Rae (Mustard Seed)
  • 2 Lemons
  • ¼ Tsp Hing (Asafetida)
  • 1 Tsp Sugar
  • 1 Tsp Salt

For Idlee Maker:

1 Cup Water

Make the Dhokla Tadka:

  1. Heat oil in the small pan.
  2. Add mustard seed, hing, salt, sesame seeds, green chilies, and roast for 30 seconds on low flames.
  3. Now add sugar, coconut powder, lemon juice, and water.
  4. Bring this to a boil and lower the heat.
  5. Cook this for 2-3 minutes and then switch off the heat.

Making the Instant Dhokla Batter:

  1. In a large bowl, mix all the ingredients except ENO and whisk to form a smooth thick batter (The batter should resemble a thick pancake batter)
  2. Now add Eno in the whisked batter and mix lightly (don’t over whisk/mix ENO as it will kill the bubbles).

Dhokla Batter Process

Steaming the Idli Dhokla:

  1. Using a ladle, fill each idli dish/maker with this mixture (leaving some space on top for it to fluff).
  2. Add 1 cup water in the Idli maker main pot (or as instructed in your idli maker manual).
  3. Place the filled idli dish inside the idli maker and steam as per instructions. (I steamed for 10 minute).
  4. Once the idli Dhokla is steamed, remove the idli plate/dish out of the idli maker (use a cloth/glove as it will be hot).
  5. Let the steam from the plate evaporate for a minute.

  1. Using a knife, carefully scoop out the idli dhokla and place them top side down on a serving platter.
  2. Once all the idli dhokla are added on the serving plate, sprinkle the tadka/tempering all over it.
  3. Let the dhokla soak up the tadka for 3-4 minutes.
  4. Sprinkle fresh cilantro on top.
  5. Serve fresh or can place in the fridge for few minutes to cool.
  6. Serve cold.
