Gajar ka Halwa – Indian Carrot Pudding – Pressure Cooker: a delicious, rich and flavorful pudding made using carrots, milk, ghee, sugar, and nuts. You can substitute ghee with butter, sugar with brown sugar/sweetener and milk with milk substitutes like cashew/almond milk. This recipe gives options to make it using shredded carrots or chopped carrots and lots of easy tips+tricks.

Gajar ka Halwa or Indian Carrot Pudding is what I dream ALL Winter Long !!!

Try it once as the rich, flavorful and melt in your mouth texture of this halwa will make you a fan too. 

This extremely popular halwa literally signifies winter season for many of us and I’m sure you must have had many different versions of it.

As delicious as the halwa looks, it is extremely easy to make……with just one catch you need shredded carrots !

This is not the case at our home most of the time (as I hate getting those pre-shred carrots as they donot have any taste/flavor in them). 

So How do you make this Deliciousness??? 

My easiest answer and trust me it works every time like a charm ‘Chopped Carrots’ ! Yup simply chop the carrots at home.

I just peel the carrots and chop them into bite-size (and some not so bite-size) pieces and then the next easiest thing, use a pressure cooker to make the beloved Gajar ka Halwa.

The pressure cooker cuts the whole cooking time to half and the halwa is literally ready in 40 minutes (with chopped carrots) or in 20 minutes (with shredded carrots).

So let’s discuss the ingredients before you run to make it 🙂

:: Ingredients to Make Gajar ka Halwa ::

  • Carrots
  • Whole Milk – you may use fat-free or lower-fat milk or even milk substitutes like cashew or almond milk.
  • Sugar – You can substitute with brown sugar or sweetener
  • Cardamom
  • Ghee
  • Almonds – Chopped (To decorate)
  • Raisins – Optional (To decorate)

Optional Add Ons:

  • Condensed Milk
  • Khoya
  • Milk Powder

Method to Make Gajar ka Halwa :

Gajar ka Halwa in Pressure Cooker:

This is my favorite and a very convenient method to make this halwa. You can find the detailed steps below in the recipe card.

  • You start by heating a pressure cooker (I’m using 3liters cooker).
  • Then add ghee, cardamom and cloves.
  • Add chopped carrots, milk and saute everything
  • Close the lid and pressure cook for 2 minutes or 4 whistles.
  • Cool the pressure cooker, then open the lid and start cooking it again.
  • Start by using a masher or large round spoon and mash the carrots while sauteeing.

  • Keep mashing the carrots and sauteeing them at the same time.
  • This takes about 5 minutes and the tender carrots get all mushy by then.
  • Then add sugar, nuts and sautee for another 5 minuter.
  • Add khoya on top, mix and turn off the heat.
  • Transfer the gajar ka halwa in a serving bowl and enjoy.

 

Gajar ka Halwa in Cooker Method

 

Gajar ka Halwa in a Pan/Kadai:

  1. In a non-stick pan or Kadai, melt ghee on medium heat.
  2. Add shredded carrots and stir-fry for about 7-8 minutes or till carrots become tender and slightly orange-pink in color.
  3. Add milk and keep sauteeing the mix for the next 2 minutes over medium heat (this prevents it from burning/scalding).
  4. Reduce the heat to lowest and let this cook on low flame for the next 10 minutes (keep stirring every minute to prevent it from burning).
  5. Add sugar, raisins, nuts and cardamom powder & stir for another three to four minutes until the halwa starts to leave the sides of the pot.
  6. Add khoya and stir once and then turn off the heat.
  7. Transfer the cooked gajar halwa in a serving bowl and serve.

Tips / Tricks to make Gajar Halwa (Indian Carrot Pudding)

This halwa stays in the fridge for 1 week and you can freeze it for a month.

Chopped Carrots you can use shredded carrots in equal quantity

Whole Milkyou may use fat-free or low-fat milk or even cashew/almond milk for vegan options.

White Sugaryou can substitute with brown sugar or sweetener

Melted Ghee you can use white butter or unsalted butter too

Khoya you can use condensed milk or cream to decorate too

Ingredients

  • 2 Cups Chopped Carrots - bite-size *
  • 4 Cups Whole Milk **
  • 1/4 Cup White Sugar ***
  • 5 Whole Green Cardamom - crushed
  • 3 Cloves - crushed
  • 1/4 Cup Melted Ghee ****
  • 12 Almonds - chopped
  • 6 Cashews - chopped
  • 10 Raisins
  • 2 Tbsp Khoya (milk solids) *****

Instructions

Gajar ka Halwa in Pressure Cooker:

  1. Heat 1/4 cup ghee in a pressure cooker.
  2. Add crushed green cardamom, cloves and saute for 30 seconds (low heat).
  3. Add chopped carrots (or shredded carrots) and saute everything for a minute.
  4. Add milk and saute for 30-40 seconds.
  5. Now close the pressure cooker lid and let this cook on High Flame for 3 minutes or 4 whistles.
  6. Once the whistles are done, turn off the heat and let the pressure cooker cool.
  7. Once the pressure cooker is cold, remove the lid and turn on the heat (with the pressure cooker on the stove).
  8. Now keep the heat to medium and start mixing the tender almost cooked carrots.
  9. (if using chopped carrot) Mix the carrots and then push it down on the pan to break them into tiny pieces. Keep continuing this till you see the carrots completely broken into tiny pieces (takes 5 minutes).
  10. Now, add chopped nuts, raisins, sugar and cook the carrot halwa on medium heat.
  11. Keep sauteeing and cooking till you see ghee separate towards the sides or for 5 minutes.
  12. Add more chopped nuts (if need be) and add khoya (shred it a little).
  13. Mix and turn off the heat.
  14. Transfer the Gajar ka Halwa in serving dishes and serve hot

      Hi Adina, sure, you can use almond milk however please remember if you’re using sweetened almond milk, then do add sugar accordingly. Would love to hear how it came out 🙂
